Commercial Description:
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

Bottle. Pours a dark golden with a thin white head, good lacing. Aroma is sour yeast and sweet malts. Notes of dark fruit, pepper, fig, and some other spices stand out. On the palate, it is surprisingly chewy. The flavor brings out a bit of a banana character. It finshes dry and a bit sour. This beer was very interesting to say the least. It has almost a wine type flavor and is pretty complex. With that said, I am not a huge fan.

Bomber. Bottled April 2008, taste here in late October 2009, so been sitting on this for a year and a half. Dusty, yeasty nose, a little pale malt, big pepper and floral notes, dry with tart fruit. Clear but deep golden body with strong carbonation and a sudsy meringue laid right on top - frothy, creamy and lacing, sort of reminds of old shaving cream or fire extinguisher exhaust. Taste is very dry and peppery, wood and cracked leather, black pepper and very very dry malt. Alcohol is well-integrated but there’s a mild tongue numbing all over. Yeast has some mild lambic tartness, not really sour, but sort of has the laminal caress of a rubber glove. Very full, very smooth body, a unique sort of funk.

Sampled from a 22 oz brown bottle this beer poured a slightly hazy yellow-golden color with a huge yellow-white head. The aroma was an enticing blend of sweet apricot and pear. The flavor was dry, tart and funky with undertones of pear and apricot and touches of vague spices. The finish was long, tart, sour and dry. Medium body. The alcohol was well hidden. Interesting.

Tap at Trappeze. Poured cloudy orangish brown, with a small head. Aroma of mixed tart fruits, yeast, spice, and light brett. Taste is similar, with the spice taking over, brett being barely detectable. Malt backing is solid. Overall, a fair brew. I appreciate the experimental natrue of the brew, but would not seek this out.

Has an initial aroma of fruit, presumably the fig, followed up with an odd aroma. Figure its probably the "wet blanket" aroma associated with the brettanomyces. Has a very fruity flavor with some hints of green olive which strengthens in the end. Not much malt or hop flavor seemed to come through for me. Has a good level of carbonation. Doesn’t seem to have much head retention. Pours very hazy copper.

bomber - pushing a year+ now; light gold with slight haze and fluffy white head; aromas are pretty much straight up pineapple brett; light tartness and basically bone dry in the finish; wheaty flavors with pineapple, tart lemons, pepper and a little barnyard; brett character is pretty dominating and comes off slightly harsh

Clear yellow of color with a weak white head. An aroma of barn, dry and sour. A flavor of fruits and dry.

Pours a cloudy peach-orange with a large, rising white head. Aroma is spicy with light fruits, floral aroma, yeast, tart. Flavor is a little fruity at first, then comes actually a black olive flavor until the dry end. The pepper is very noticeable too. Pleasant flavor. Mouthfeel is creamy, a bit thin on the viscosity. Overall, very good.
