Flavor is nice and smooth. Nice mixture of malt and hops, good balance. Pours a deep, dark black with excellent carbonation and a healthy but fleeting mocha-colored head. Aroma is rich but not overwhelming, with strong caramel notes along with hints of roasted malt, syrupy hops, and dark fruit. Taste is smooth and somewhat dry, with an initial flavor of caramel and roasted malt giving way to a finish of crisp hops, smoke, and a few floral notes. Skillfully balanced and almost addictively drinkable, this is a wonderfully crafted beer. Elizavyeta (110), Minnesota, USA Feb 16, 2008 An utterly gorgeous dark brew with a subtle nuttiness and hints of licorice and malt. Its wispy head quickly dissipates into a dense dark-brown morass.
Overall flavor is interesting - initially light and somewhat tart it becomes progressively sweeter and more robust leaving the palate clean and unburdened for the next sip.
Would pair well with bratwursts and sweet, buttery corn on the cob. GMCC2181 (845), Bear, Delaware, USA Feb 16, 2008 Bottle: Smelled fruity and malty... Color was dark, one finger head that disappeared quickly. Flavor is all malt, which is a nice change up. Smooth. Dopplebocks are not my favorite, and I dont have much experience rating them, but this was good. Chantdaddy (19), New Jersey, USA Feb 16, 2008 This is the benchmark for all doppelbocks... the best I’ve ever tasted. A total malt bomb that shows off the Ayinger brewer’s prowess. Creamy, smooth, full-bodied... almost black with ultra-garnet hues when held to the light. If you don’t know what decoction mashing is or don’t know what it does to a beer, this brew represents the epitome of decoction... great, sweet, melanoidin flavor, and geat dextrin body. This beer is all about the malt and has just enough carbonation and hops to help wash it down so you’re left reaching for another bottle. While most of Ayinger’s offerings have become shadows of themselves (to varying degrees), Celebrator has remained gloriously constant. A must for fall, winter, and even the spring!
