Commercial Description:
Our Ayinger Ur-Weisse is an old-fashioned wheat with some fine roasted malt to give it more color and flavor than golden hefe- weisse. It has an immense crown of lovely foam held proudly above a robe of translucent amber. On the palate, malt and yeast predominate, with a delicious balance of fruit and bread-like yeast. The taste is complex, with suggestions of soft fruit, apple, and, in the finish, perhaps, even cloves.

Right behind Schneider in the Ur-Weisse style. Cloudy dark amber color this a lasting foamy head. Tends to lean to the more spicy aroma (cloves and slight cinnamon). Some banana phenols as well. Yeast and spice flavors blend well with the wheat and malt sweetness. Finishes quite clean and refreshing.

Bottled. Banana and sweet dark malts aroma. Cloudy, dark amber color, off-white head, good lace. Sweet, light bitter, banana, weizen, medium body. Good quality and easy drinking.

Hazy dark brown color with a large white head with large bubbles and sticky lacing. The aroma has a wonderfully caramelly sweet malt body with a light hop balance. Notes of fig & pear with the banana/clove german hefe esters. The flavor is creamy with lots of apples and yeast notes. This is a tasty hefe with some solid flavors, just seems a little dumbed down than what was intended though.

Bottle. Dark cloudy amber with large rocky off-white head. Complex aroma that was yeasty and citrus. Medium to full body. Complex flavor of moderate sweet of citus and spices with average sweet finish.

Bottle from Peace St. Market, Raleigh, NC. Dark straw pour, with combined aromas and tastes of caramel malt, toffee, banana, cloves, and hops. More fruit as it finishes. Nicely done, and another winner from Ayinger.

Head is initially large, frothy, off-white, fully lasting. Body is hazy medium amber, bottle conditioned. Aroma is moderately malty (toasted bread, caramel, nuts), moderately yeasty (cobwebs), with notes of banana, honey, and clove. Flavor is moderately sweet, moderately acidic. Finish is lightly sweet, moderately acidic, lightly bitter. Medium body, velvety texture, lively carbonation. Very clean, consistent, and pleasantly aromatic. Succulent Ayinger malt. Delicious, and for me has always scored significantly higher than Schneider Weisse (the most common example of this older, darker weisse).

Draught at brewery restaurent. Creamy white good mostly lasting head. Light amber colour. Very yeasty aroma and flavor. Nice oily fluffy palate. A very good hefe.

Sort of like a combination bock-weiss beer, and sort of successful. Nice balance of malt and hops, but somewhat undermined by a serious carbonation issue. This ain’t 7up, guys! Smooth it out!
