Cabbagey, sweet corn notes running rampant. Chaotic cereals. Not as attenuated as most honey ales. Bready tartness from the yeast. Hopless. Not pleasant. Yeast phenols crowd the honeyed sweetness, as earthy tones and fruity tartness attempt complexity. This bottle-conditioned example was probably not as clean as it should have been.
Further Personal Perceptions:
-A veil of foam tops the cloudy golden.
-There was probably too much yeast in the bottle to not affect the flavor profile much.
-This yeast seems to be of the weizen variety, as its phenols and esters recall cloves and plantanes.
-A light vegetal character (DMS?) emanates from the ubiquitous yeast.
-A cleaner bottle, with less yeast presence, would surely have made the honeyed sweetness more present.

Honey beer.
Compact and of good fulness head, optimal resistance. Beautiful golden color, light hazy and with a good and fine fizz. Amazing and most pleasant scent: immediate notes of honey, pear (lightly) and hop. Much flowery and perfumed with a small bitter tip. Lively taste but not excessive prickly. In mouth it’s sweet and soft with determined and balanced notes of honey and sugar contrasted from a modest bitter train on the end. Light perceivable alcohol. Optimal experiment.
