Commercial Description:
Aroma initially characterized by pepper that fight in a field ruled by a rich fruity fragrance of dried fruits with ripen banana, toffee and a soft sweet chocolate fragrance. The attentive taster shouldn't miss a sharp floral of rose and a sensation of must of wine always pleasant.

Unclear with small body particles a medium amber color with a average, frothy - creamy, good lacing, mostly lasting, off-white to light beige head. Aroma is moderate to light heavy malty, roasted, caramel nutty, brown sugar, syrupy. Flavor is moderate to light heavy sweet and light to moderate bitter with a average to long duration. Body is medium to light, texture is watery to oily, carbonation is soft. [20081121]

Bottle. Medium high and lasting creamy light brown head leaving nice curtains. Hazy very dark brown body. Roasted barley malt aroma with choccolate. Mild and creamy mouthfeel and a flavor that is quite sweet without hops bitterness. Caramel roasted malt honey flavor with low carbonation and a short aftertaste. Alcohol well hidden.

La Noel del Baladin "standard" è un classico che ha ispirato due grandiose variazioni al genio birrario di Teo Musso: la Noel Chocolat e la Noel Cafè. Io prima di tutto ho assaggiato quest’ultima (la Chocolat purtroppo mi manca ma ho intenzione di rifarmi molto presto) che mi aveva stregato, alla spina, al locale a Piozzo, in un pranzo invernale con il paese ricoperto di neve... il paragone è impossibile da evitare quando oggi, per festeggiare l’esame di archeologia, decido di finire da solo un bel bottiglione di Noel che ho comprato da Squillari due settimane fa. L’aroma è ottimo, direi la cosa migliore; il sapore è molto gradevole ma non riesco a sentirci una qualche mancanza, una qualche incompletezza, qualcosa che forse anche Teo conosce e per questo vi ha esercitato le sue variazione. E’ comunque molto molto molto buona, ma l’eccellenza del marchio Baladin ci ha abituati male! a vette di assoluto prestigio e delizie di ricercata complessità; qui il corpo un po’ pesante unito ad una frizzantezza accentuata non limano il ’grezzo’ di cui parlavo ma anzi lo fanno pesare anche un poco di più così che il bevitore si trova un pochino spiazzato. Comunque sono felicissimo di averla bevuta tutta quanta; ora mi metto a lavorare alla tesi (sono sobrissimo... sarà che ero proprio affaticato e mi ci voleva un po’ di energia.... alla faccia dell’energia, fuori piove, Natale è passato ma è sempre il momento giusto per una buona birra del Baladin... e poi non mi poteva mancare questo assaggio dai)

Bottle@home Apperance: Copper/Red with a nice and quite light white head. Aroma: Spices, Herbs, Caramel, Dark fruit. Flavor: Caramel, Herbs, Spices (pepper among others), Licorice. Palate: Sweet with a creamy but rather thin body. Alot of carbonation in this one. This beer was extremely drinkable due to its high carbonation. Still, i hoped for some more body and more everything with this beer. Would i drink it again, yes indeed. Dunno if i would cough up the 10E this beer cost me tho. Give it a shot!

Second half of a 750ml bottle. Reddish brown pour with lots of floaties. Little head that disappears completely. A touch of spice, sweetness, and alcohol on the nose. Chocolate, a bit of dark fruit, caramel, and vague spice flavors. Finishes sweet with a little bitterness, nuttiness and unless it’s the description influencing me, a bit wine-like. Mouthfeel is a too thin for me.

Bottle: Clear depp,dark red colour, with a werry nice creamy head. Roma ofmalts , citric, caramel, and nice hopy balnced. Flavor is fruity/yeasty,citric mouth feeling, with a nice belgian ale touch, this is a werry nice mild but complex beer. Ìts not so "big" that the orginal Belgian beer is, but its nice enyway, difficult to explain this mouth feeling, but a well done beer it is indeed. Medium to full body, and a medium fruity/yeasty/alcy finish. Nice!

Bottle courtesy of Retorp. Pours a dark brown to black color with a thin white head. Aroma is sweet and malty with faint notes of dark fruit, honey, pine, phenol, maybe some chocolate. Flavor is fairly devoid of malty notes but is slightly sweet and alcoholic with some notes of caramel, yeast and bread. Generally medium body with slightly dry finish.
