Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Pours a hazy yellow/orange color with a white head. Aroma is malty, spicy, and cloves. Flavor is bready, yeasty, some cloves.

Pours a transparent bright copper orange with a nicely-lacing frothy white head. Aroma of grassy earthy hops and sweet pale biscuity malt. Body starts fairly true to style with a nice, carbonated sweetness, a touch of lemongrass and decent complexity and earthy balance. A nice saison.

Aged roughly two years: Dull yellow. Dense smattering of creamy, clingy froth holds extremely well. Explosively perfumey esters are accompanied by a touch of bandage phenols, chamomile, cardamom, and lavender. Lurking notes of lime peel and vibrantly floral hops. Soft, expansive effervescence. Dryly phenolic and white peppery, initially, with a juicier yet notably subtle blend of pear and floral hops soon emerging. Pronounced lavender gives way to the feisty phenols which stop just short of becoming overly astringent. Grassy bitterness persists, though much is negated by the intense dryness. Deceptively slick and juicy due to the brisk dryness and snappy phenols. Cardamom- and coriander-infused peaches bolster the body’s succulence. Possesses just enough rounded unripe-peach acidity which gently counteracts the phenols while brightening the vibrant lavender. Malt is fairly firm and crackery, but virtually undetectable. Finishes greenly peachy and heavily musty with lingering notes of baked apples, mandarin oranges, and chamomile. A lovely take on the style. Unlike too many saisons, this doesn’t solely rely on the heavy-handed use of spices and herbs to achieve complexity. There is an array of supportive accompaniments such as esters and phenols, which is indicative of the craftsmanship here. Rather polished and quenching, overall, and also deeply rustic yet sophisticated.

At PP 12 hour fest: A cloudy copper hue with a small frothy head and some lace. The aroma has notes of coriander, clove, rye, tangerine, flowery hops and dusty yeast esters. The taste is moderately sweet and fruity up front with a layer of spice under it all. The finish is extremely herbal in character with a additional note of rye snap. Overall not a bad brew but a bit discombulated with the spices.

75 cl bottle. A cloudy orange beer with a nice white head. Oranges, coriander and other spices in the aroma. Coriander is the main spice in the flavour. Light body, unusual and complex. A very nice, refreshing and drinkable beer.

Hazed and buffed yellow in color with some bubbling white islands on top. Lemon shortbread lines the nose with coriander and a touch of livening chiffon. Carbonation jumps up but then a dulled lemon head flavor blankets down with a diffusing lemon icing sweetness. Ginger candies meet a touch of caramel drizzled on golden delicious apples, recessing to a light lemon shortbread et angel food cake flavor. Letting it breath serves it well, leveling it and proving to be more balanced that it initially indicated. Lemon sweet tarts and flakey vanilla nip crust wraps the finish up into a tight little bundle.

The body’s a cloudy straw color with some particles in suspension and the fizzy head lingers none too long. The nose has a sharp citric base with warm, peppery spices, light fruits, and flower pedals. Almost funky. A bit too carbonated for my liking. It tastes of tart oranges and tangerines, white pepper, coriander, St. Joseph’s children’s aspirin, ginseng, and pineapple. Finishing on a tart, somewhat sour note, this is one enjoyable, refreshing drink.
