Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Sampled at Dutch70’s "Tasting in the Woods, Part Deux". Pours cloudy yellow with a high white head. Lemon, pepper and citrus zestiness in the nose. Light/sweet pale malt, lemon zest, herbal noble hops and pepper. Pretty dry. Light bodied with very soft carbonation. Enjoyable.

TITW Part Deux - 750 mL bottle, courtesy of whkingery. Thanks, Bill! Golden-amber; fluffy white head; good retention. Some honey, white pepper, soap and lemon in the aroma. Light-to-medium mouthfeel: white pepper, belgian spices, slightly watery, hints of honey. Medium finish with lemon hops and spice.

TITW Part Deux - Hazed gold, thin fizzy white head. Interesting nose with notes of spiced tangerine, lemon zest, white pepper, and lighter shades of florals. Spiced flavors throughout that mingle with citric and earthy wheat tones. Medium bodied, medim carbonation, lightly sweet finish. I like it, it was unique, but I could not drink a lot of it. Bottle... TITW Part Deux... Murky yellow ale with a small, frothy, white head. The nose delivers notes of spicy, earthy hops, light apricot and white pepper. The flavor is thin and unbalanced, leaning well into the sweet side. Apricot esters in the flavor as well. Medium-bodied with a milky mouthfeel and prickly carbonation. Finishes sweet, then dries out a bit. Thanks go out to whkingery for sharing his bottle!

This bottled brew from a bottle shop poured a very large sized head of foamy fine to medium sized white colored bubbles that was mostly diminishing and left behind a slightly hazy uncarbonated yellow colored body and a good thick foamy lacing. The thin smooth mouth feel was weakly tingly at the start and at the finish. The flavor contained notes of malt and mild hops. A decent one but not one that I would consider buying again.

Thanks to Alan at Coastal Wine Connection ... Poured very pale, more than expected. Champagne-like top. Little aroma at first, but the beer delivers a nice palate and a body that would compliment almost any food. Tart at first but settles into a complex fruity and light ale with a moderate body. Outstanding.

Bottle. Appearance was a mediumb sized fizzy white head that mostly diminished, virtually no lacing, minimal carbonation, hazy, and a straw yellow hue. Aroma consisted of clove, spice, fruity, citrus, and sweet malts. Nicely done. Ditto for the flavor with the exception of it being somewhat dry tasting. Mouthfeel was smooth, thin and dry. Light-medium body. Good brew and worthy of a try.

BCTC 06 Cloudy yellow pour with a medium bubbly white head. Aroma of spicy yeast and fruits. Flavor of spices, yeast and fruits with a sweet finish, it is not attenuated enough but the sweetness is not too disturbing. The body is light to medium with an oily texture and moderate carbonation. It’s an interesting saison but I would have like it more dry.
