Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Bottled sample. Golden in colour with moderate spritzy carbonation. The aroma is a mix of apple juice with a bit of orange, which wasn’t so appealing. However, the flavor was much better with elements of pale malt, fruity Belgian yeast, violets, toasted marshmallow, orange, grasses, and some earthy herbs. Just off dry in the mouth. It’s a shame about the off-nose, as it was pretty good otherwise.

Bottle: Cloudy citrus color with a small sandy head. Nose is fruity and spicey. Nice and clean, crisp. Tastes light and floral with a medley of spices and light yeast. Sweet caramel. Pleasantly smooth and crisp. Thanks Jordan.

Haz orange and a thin creamy white head. Nice sweet jucy-fruit aroma. Flavor is light and sweet. Melon, bubblegum mandrin oranges, and light malts. Very light. Soft carbonation. Nice.

Bottle: Pours a copper bronze color with nice white head and ample lacing. Nose of ripe cantelope, peach and kiwi, some nice fruity bright yeast notes and a grassy light citrusy hop. Some ripe earthy hops and rye, nice clean smooth fruitiness along with the citrus and hop. Banana esters? Bready tail and mouthfeel. Fun and satisfying saison. A little agave maybe?!

Bottle (750ml) shared at ’Biegaman’s Second Annual Saison Tasting’ -- courtesy of biegaman. Bright gold with some slight cloudiness - later pours from the bottle had some serious chunkiness going on. Very nice aroma of mellow spice and fruit (pineapple, mango). Medium bodied. Flavour - wow, really interesting - getting some pineapple and anise, a bit of pepper and citrus, and a hint of yeast. Really nice beer!

Bottle from Hi-Time. Hazy orangey color with an ok white head. Aroma is minimal. Like very light orange and yeast over pale malt. Medium to full body with creamy carbonation. Flavor is light citrus(coriander?), light malt, light spice. Yet it all comes together to make a strong impression. Pepper showed up. In a light way. This is a smooth ale which seems to change direction constantly. The finish is mild spice and fruit with a little wheaty sort of maltiness. It’s really very tasty.

Cloudy dark amber. Quiet scent. Light head. Light peppery flavour. Tastes like a light wheat beer. A patio Saison?

Bottle (750ml) shared at ’Biegaman’s Second Annual Saison Tasting’ -- courtesy of biegaman. Pours a cloudy gold with tons of chunky floaties and a small diminishing white head. Nice aroma of fruit, yeast and spices. Flavour: Hmmm, that’s unique -- what spices am I getting? I can’t place it but I quite like it. Also some fruit, sweet malt and yeast. Medium bodied. A unique take on the style, I really liked it.
