Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

750ml bottle shared courtesy of weeare138. Poured a medium and lighlty hazy yellow color with an averaged sized white head. Aromas of ginger, other spices, lemons and other citrus. Tastes of citrus, some spices, and bready.

Thanks to weeare138 for sharing this one. Pours a lightly hazy golden with some small floaties and a medium bubbly white head. Aroma of ginger, corriander, lots of other spices, green apple, some lemon and other citrus, Flavor of ginger, bready, a bunch of spices, corriander and mixed citrus. Nice and dry...would go well with some food. Would prefer the ginger toned down.

2005-05-24. Golden yellow body with small quick white head. Very lightly funky aroma, light fruit and muted yeast. Similar flavour, zippy lemon fruit, muted spice note, mild underlying pale malt. Average plus palate. Pleasant, but not unassertive. Bottle shared by Biegaman

Bottle (750ml corked & caged). At 2nd Annual Summer Saison Tasting - beigaman’s bottle. Cloudy light orange pour, unremarkable white head (3+). Interesting aroma, spice, latex paint, apple, pineapple and pungent spruce. The taste is different yet again, lightly acidic, very spicy/yeasty, with a hint of burnt rye toast and no paint and hardly any spruce. Thick, still body, subtly astringent - has a quick finish, which was a bit of a let-down, since there was so much going on, it felt like the party ended way too suddenly - but no aftertaste to detract. Different, memorable - really good.

Sampled at Jans Saison tasting! Thanks! Appearance: Light cloudy yellow with some floaties! Aroma, Lemon and yeast with kiwi fruit in there too. Flavour: Lemon and yeast, some saltiness (?) also. Nice grapefruit finish,

My 2nd favorite out of the Baladin beers available to me at the time. This almost has a creamy tropical fruit nose, definitely exotic smelling with some mango, a bit of coconut, seasalt, grains of paradise, quite spicy on the palate, but well balanced, and has a nice zing of carbonation, with a wonderful creamy mouthfeel, this beer is truly a pleasure to drink.

Murky amber with a frothy head that lingers. First whiff is roasty, nutty malts, then peaches and mangos. Light carbonation with a creamy smooth mouthfeel. Good flavors of bready pale malts with lightly sweet peach and mango. Lots of subtle spicy goodness here. Enjoyed this one.

Bottle, 10th Beer @ PP Belgian Fest. Pours gold orange with a bright white head. Nose is sweet and there is a spicey kick. Tastes is sweet and spiced, decent interpretation of a saison.
