Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

The malts that make up both the aroma and the palate are pretty thin. Its does have some spiciness with pepper and cloves. A fizzy body but over all, decent.

The aroma is citrusy, spicy and yeasty. The appearance is golden with some haze and particles. The flavor is like the aroma and light. The palate is light also. The finish is peppery. Overall a good beer and the more I drink the more I like it.

poured into goblet. pours a cloudy chunky golden yellow, with frothy full head. sour mild soapy aroma. very mild watery palate with pepper finish, very peppery, light front to middle, lost its carbonation quickly, quick to gas out.

Bottle from Party Town. Poured hazy orange color with a large frothy white head that mostly lasted with fair lacing. Moderate spicy ard yeasty aroma. Light to medium body. Medium complex balanced bittersweet flavor with a medium sweet finish of moderate duration. Drinkable complex beer.

Bottled: Very fine, fruity aroma. Notes of citrus fruits, sweet tangarins, spices, koriander, malt and grain. Flavor is sourly sweet with lots of different grain notes, fruit and spices like koriander, cinnemon, pepper and some more. Very peppery, dry and medium bitter finish. A very good, complex brew.

Bottle. Pours a slightly hazy orange with a large white head that fades to a ring leaving some lacing. Aroma of citrus, coriander, black pepper, light clove, other spices I can’t pick out, yeast, and floral hops. Taste is spicy and slightly tart with a wonderfull balance between different malts and spices. Medium mouthfeel that finishes dry and spicy with a well balanced bitterness. A very good Saison that is extremely underrated.

Bottle i brought with me to an italian resteraunt ... clowdy orange ...zesty spicy citrrus nose ... sharp fruity ... slightly sweetened grapefruit ... little spicyness ... very juicy ... little tart in linger... well balanced and put together. In contrast with KnutAlbert i found this went great with my Spagetti Carbonara as it wqs sharp and clean enouth to cleanse palate and cut across the food.
