Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

0,75 l bottlle, Mntana 104, Parma. A fruity beer, with just the proper sourness to balance it. Some spice, and a little yeastiness, too. A full flavour beer, this is more for sipping on its own than for drinking with food. Well, being in Parma, some cured meat would be all right. Good stuff.

First off, I think this beer is way underrated. Pours a cloudy pale yellow with a nice frothy white head. Smells of big ginger and and sppices. A little clove in there too. Smells refreshing. The taste is mild but still full-flavored. Nice spiciness to it with some nutmeg and ginger in there as well. Really balances out well. I truly enjoy drinking this beer. Excellent job by them.

Poured a cloudy light straw color with a moderate light white head. Aroma a mild floral blend of spice and malt. Light palate. Taste is mild as well, with the spice coming through and a light grassy finish. A different saison, more subtle and light overall, but a real drinkable and refreshing take on the style.

Appearance: Pours a slightly hazy, light yellow body with a medium-sized head. Smell: A scent that’s the embodiment of Springtime! Plenty of bright, floral notes with hints of honey and spice. The funkiness in the scent is so light, why even bring it up? Taste: For a saison, assuming this is indeed a saison, the flavor is fairly approachable and easy-going with its mild, pleasing honey-dough sweetness and flavors of fresh-made lemonade and apple juiceboxes. I found the spicing, yeast character, and heck, even the finish to be remarkably light and clean. Mouthfeel: Thin-bodied, with a moderate amount of carbonation. Drinkability: While normally I angrily demand an explanation (followed by an apology) from my saisons, I’m content to let this one be both light and refreshing.

pale yellow color with a thin white head. tastes like bananas and lemons. i’m not a particular fan of saisons so i guess i’jm a bit biased but i once said that about barleywines so we’ll see...

Verre de dégustation, provenant d’une bouteille verte de 750 ml avec bouchon de liège, dégusté lors de la soirée "La croisée des chemins" chez Cathshlag. Arôme: Odeur d’épices avec une pointe de gomme baloune. Apparence: La couleur est blonde pâle voilée avec une faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût d’agrumes et de coriandre avec une pointe de gingembre. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement minérale. Moyenne effervescence en bouche. (Rating #1024)

My Bottom Line:
The blossoming herbal wilderness and milky coriander spiciness of this perfumy Belgian-style Ale captivate the tastebuds, especially as they are able to join the bready cereals in forming a cushiony realm.

Further Personal Perceptions:
-A veil of foam covers the cloudy white.
-Is there thyme in here? Maybe rosemary? The complex spiciness sure is intriguing.
-A touch of brettanomyces is perceived amongst the tree bark allusions.
-The soft carbonation helps the mouthfeel.
-The flavor spectrum is wide and it amazingly works.

A lemon and vinegar aroma. A murky yellow appearance with a white head. The flavor consists of mostly lemons with some cloves present. The finish was quite sour. An easy drinker if not all that complex.
