Commercial Description:
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Bottle @ Cole’s Italian Beer Tasting. Gold, next to no head. Some lemon & light malt but very little aroma. Flavor is also very restrained - a little yeast, some pils malt, light spice/pepperiness.

Bottle – Coles - Buffalo
Appearance: thickly hazed golden-amber look , light fizzy top. 3-
Nose: citric , orange peel , spice , amber malt , meadow softness at end 7- .
Flavor/Palate : light bodied with fairly high carbonation. Belgian wit blend with saison ? Bit of everything on sides.

bottle poured a yellow golden color with fizzy carbonation and a thin white head. aroma has light wheat, mild spices, and wet flowers. flavor is along the nose, light orange and lemon peel with some light fruit touches.

coles Italian beer tasting. yellow with nice head. nose is spicy a little hop in mild doses, barnyard. wheat in the flavor with nice spice and a little bitterness

Sample @ Coles Italian Beer tasting. Pours a witish yellow blonde with a small white head. Dry fruitiness, medium spice. seemed more wit like than a sison but very very tasty & drinkable. Very nice

Hazy blond with a thin white head. Nose of hay and a little grainy note. Body is very thin with gentle grainy backbone. Light aftertaste, almost unpleasant wet grain, barnyard feeling, Quite ordinary blonde beer and in my opinion far from being a Saison. NB: The bottle indicated best before september 2009. Will give it a try with a fresher bottle next time.

Pours a glowing yellow with a pillowy white head. Very citrusy nose with spice and yeast. Lemon, orange, bread, mushrooms and coriander. Decent mouth feel. Nice beer.

Bottle from Nightfall, thanks! Best until 3-09. Vinous aroma with grapes, pepper and citrus. Malty, peppery, slightly perfumed sweetish flavor. Hints of melon and honey. Vinous notes. Excellent, maybe a bit too perfumed.
