Commercial Description:
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions. Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding. Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Sampled at hellbilly’s hellraiser 3 gathering. Bottle courtesy of rustychiles. Pours a deep red color with little head. Lots of roast, spice, fruit and alcohol in the aroma. Flavor is sweet malt, fruit, raisins and spice. Decent alcohol bite and some hoppiness on the finish. Delicious. Thanks Rusty!

All I can say about this is wow.. This cost me $240 for a 6-pack case, but it was worth every penny. This is like a carnival in a bottle, large toffee popcorn aromas, some butterscotch, and cotton candy. Lots of dark fruit flavors, with sweet molasses, dates, a bit of tar, and rich alcohol to round out the finish. This was lovely.

Bottle shared by rustychiles...THANKS RUSTY!!! Not sure how I forgot to enter in this rating (although quite a few brews were presented @ the Hellbilly Tasting!!! Maple syrup pour with absolutely no head and minimal carbonation. Amazingly sweet...caramel, molasses, raisin, vanilla, and maybe even a hint of chocolate. Coats the palate like varnish on oak...interesting.

Thanks to a few Santas ago for this one. Pours out a thick reddish brown with no head, no carbonation, was like that I’d think pouring Mrs Butterworth’s into a snifter would be like. Aroma was very sweet with some dried fruit, earth and alcohol. Thick, syrupy mouthfeel with notes of dried fruit, caramel, alcohol, toffee and some port also. Sweetness dominates. Interesting but at the price tag I thank Santa for this one, because I’d probably never buy it.

2004 Bottle - Lordy, lordy...Thanks to Sam, we tasted all 3 Xyauyu side by side, absurd!...Pours shimmery dark gold, no head, a still beer, if you call it beer...aroma is aged fruit, caramel and molassas...flavour is the same, smooth as silk and only slight heat, sherry like in the mouth...I would never have guess this beer if tasing from stemware without pouring it myself...if not for the absurd price tag, this would easily always be in my house.

auburn copper color, lighter golden edges. aroma is like a desert wine and honey, mead. flavor is sweet sherry and honey mead. a little heat in the finish but not too much. thanks JimMack!

Pours a caramel color with no head. This stuff is flatter than gwen stefani used to be. Aroma is caramel, faded oxidized hops, malt. Flavor is syrupy, caramel, faded hops, kind of port like. Pretty one dimensional but really interesting. Unlike beer more like wine. Can’t believe I paid $40 for this though, not worth the price.

Bottle. Pours a clear copper with no head. Aroma of alcohol, sweet tarts, green apples, pear, and sherry. Taste is very sweet green apples and pear with notes of honey and warm alcohol. Medium full mouthfeel with no carbonation and warm but never hot alcohol. Very good.
