Commercial Description:
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions. Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding. Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Flat oily jet black with absolutely no head nor carbonation. Love gold and silver label. Copper less. The former two resembles sherry and port, full of plums,figs, dates, chocolate, vanilla. Flavour is sweet, warming, and all the aromatic features fully develops as warmed by the mouth. Certainly not boring nor sickening, velvety palate. Hard to call it beer, tough.

Expensive freaking 2005 edition ($48). Labeled 13%. Pours with a still maple hazed color and some medium strength alcohol legs attached to the side of the glass. Some particles towards the end of the bottle. Aroma is very nice with port, madeira, chocolate syrup, prunes, raisins, fusel alcohol and butterscotch. Taste is like drinking maple syrup with port, a touch of wood, sherry, SUPER HIGH RESIDUAL SUGARS, raisins and a slightly bitter finish. Although there is noticeable alcohol in the aroma their is minimal transferred to the taste. Ungodly maple syrupy thick mouthfeel. Seriously one of the thickest beers I have ever had. Nice, but not nearly fifty bones worth of niceness.

Pours a caramel color with no head. This stuff is flatter than gwen stefani used to be. Aroma is caramel, faded oxidized hops, malt. Flavor is syrupy, caramel, faded hops, kind of port like. Pretty one dimensional but really interesting. Unlike beer more like wine. Can’t believe I paid $40 for this though, not worth the price.

Bottle at Funky Buddha/Case and Keg tasting. Copper color, no head. Aroma is sweet as hell. I get syrup, sugar and brandy. Flavor is really sweet. This is a sipper and good thing it wil store in the liquor cabinet for quite some time. Flavor is loaded with sugar, honey, syrup, port wine. Thick and rich.

2006 vintage. Pours a caramel colour with absolutely no head. The aroma is like an Oloroso sherry. Sour and oxidized nose. Complex sweet and sour notes on the nose including maple and caramel. Tastes as sweet as unfermented wort. Very sweet, but very complex. Maple, caramel, cherry, wood, and cereal. No carbonation... but still very nice. Weird like the other beer from this brewery. If I had to pay $35 for this bottle I don’t think I’d be super stoked. But very good none the less.

Bottle: The aroma consists of caramel, chocolate, molasses, alcohol, raisin, and faint fruit. It pours a mostly transparent brownish-orange with lots of fine sediment and a few scant bubbles and a ring around the edge of the glass. The flavor is very malty. It starts with a sugary combination if caramel, molasses, and caramel. The some faint fruitiness in the background. The finish has some hints of raisin, apple, cinnamon, and alcohol. the aroma would lead you to believe it would be much hotter. Full bodied with minimal carbonation and a syrupy mouthfeel.

I forget who brought this beer to jjpm74’s gathering, but it was most appreciated. Poured a cloudy amber with an off-white head. Strange aroma of buttered biscuits, with some sweet almost diacetyl-like notes. Kind of off-putting. However, the flavor is much nicer with sweet brown sugar, molasses, a bit of honey. A very sweet barley wine, but pleasant to drink once I got past the aroma.

The Dan Journal #293. Tasted 9/10/09. 500ml bottle. $42.00/bottle? That’s what Dan told me. Hazy with a cognac hue and viscosity. Minimal head. Very complex aromas with a lot of fruity esters and raisins, surrounded by vinuous notes and a good burn in the nostrils. Super full bodied with flavors of apples and port wine. Mild astringency with a Mead like flavor. Solid and worth trying. But not at that price point.
