ALLOVATE (1127), Perth, Australia Dec 25, 2005 Strange when it comes to rating something so distant from beer and cider that it may as well be waffles!! My mother loves this stuff and I have been sipping it’s sweet nectar whilst holidaying in Walpole for a few years now without sparing five minutes to take down some notes. Pours a slickly, treacly looking palest lemon meringue yellow and completely still. Feint whiffs of chamomile, ginger and St johns wort in the slightly peppery and medicinal, concentrated honey nose. Well controlled with no hint of the alcohol. Piney, almost wood aged notes fill the mouth in the offset. Honey flavours are strong; palest fresh sapped honey, treacly thick and smooth in mouthfeel. Sweet without being cloying and wonderfully persistent as to give it a great balanced base. Ginger comes in gently as I held it on my tongue with notes of wildflower petals and dried herbs, and the finish is long, warming, smooth and quite sweet with no hint of the well controlled alcohol. This is a great Metheglin, and its a shame it took so long for me to rate as I haven’t been down to Denmark in quite some time. Tasted warm it was a treat, but I’d say it would be equally good chilled. Lovely stuff!!! (12.5% ABV, 75cL, age unknown)
