I searched high and low for this beer and managed to get my hands on a few bottles before it disappeared forever... Bell’s Consecrator Doppelbock pours an opaque brown amber color with a ring of beige crown around the edge. The nose is malty caramel (modestly sweet) with a hint of alcohol. A nicely done caramel apple taste dominates the flavor with a mild bitterness to balance it all out. It has a smooth, mellow finish with some discreet, pleasing woodiness. Some alcohol shows up in the finish as well. This beer gets seems to get sweeter in flavor and more alcohol burn the warmer it gets. The body is a bit heavier than average and coats the mouth nicely.
This was a pretty good Americanized Doppelbock and seems to be aging nicely. Another thumbs up for Bell’s! --

Dec 28, 2006 Bottle from TPaliga; Nose is sweet caramel; Rusty colored with a tiny quick disappearing beige head; flavor shows sweet caramel malt from the medium body, the caramel and sweetness combine with a little alcohol for the finish.

Dec 24, 2006 Pours a two finger white head that vanishes without a trace of lace. Slightly cloudy amber color. Light carbonation and medium bodied. Strong sweet malty nose. Dec 24, 2006 Pours brown with a medium darker creamy head. Aroma is malty. Flavor is malts, chocolate, roasty, and burnt caramel. Slightly thick and a little bitter. Decent brew.

Dec 18, 2006 Bottle. Pours a hazy brown-ruby color with a medium sized beige head, decent lacing. Aroma is dried cherries, malt, caramel, chocolate. Flavor is caramel, honey, chocolate, malt. Palate is medium full, resinous, sweet, syrup like finish. Pretty good.

Dec 2, 2006 120z bottle. Batch 7209. Relatively clear, reddish amber hue. Little to no head. Strong red ripe berry aromas. Cranberry, apple, grape. Slightly vinuous. Full and sweet. Slick and delicious. Full on malts. Still vinuous, but with a slight cocoa and chocolate malt note. Burn is nice and almost whiskey-ish. Lively body with a layered malt profile. But definitely malt dominant. Toasty bready note somewhere in the malt spectrum. Well done!

Nov 12, 2006 12oz Bottle from PitStop NelsonVille Ohio, Pours very nice dark ruby red body with minimal to no head, smells sweet with a taste that follows the nose. Easy to drink, Easy to finish. Not bad for my first Dopplebock. Bells continues to impress.
