Jan 21, 2003 Another fine effort from the folks in Bethlehem. Extremely flavorful; mainly spices, with a tiny bit of hop on a solid backing of malt. The high alcohol is well-concealed. Abundant fluffy head, over a yellow, almost pilsner-pale body.

Feb 16, 2009 on tap-pours a white head and yellow color. Aroma is rock candy, fruit, some yeast, spice. Taste is rock candy, medium malt, fruit, some yeast, spice.

Feb 6, 2009 On tap at Bethlehem location. Pours a lightly hazy golden with a medium creamy white head that left some lacing. Aroma of green apple, bubblegum, peppery notes, Belgian yeast esters, lemon peel and dough. Flavor of yeast, earthy notes, pepper, light lemon notes, doughy, light alcohol and rather dry. A solid brewpub Tripel.

Oct 11, 2008 Straw yellow color with no head. Good lacing. Minimal fruit and spice aroma. Taste of green apple, pear with a hint of spice. No alcohol edge.

Feb 13, 2005 On tap at BBW, a very sweet aroma on a pale clear gold body. Definitely didn’t look like a tripel in the glass, but the flavor was very nice, a little on the sweet side, with neither component taking control of the flavor. The mouthfeel was almost a little tingly, possibly part of the 8.7% ABV that they say this has, but I didn’t really taste the alcohol as part of the beer.

Feb 15, 2009 Tap @ the brew pub. Poured a clear gold color with an almost white head. Spicy Belgian yeast aroma with light bready malt. Light notes of fruity orange and pear. Spicy clove flavor. Malty finish with some warmth. Medium bodied.

Mar 23, 2003 Appearance is another lemon meringue Belgian double — a white head on a cloudy lemon colored body. Taste of spice, bread, hops, yeast, and alcohol, with a sour finish not characteristic of the type.

Jan 2, 2004 Could use some aging... what I had was still somewhat sweet, cloying, but overall: enjoyable. Very estery, and somewhat phenolic.
