75cl corked and caged: Upon opening the cork shot of leaving a dent in the ceiling. Quite high carbonation! A slightly hazy light gold color with a huge white head that dwindles to a finger quite quickly. The label says there is only 5% honey in this beer but the aroma smells like much more. Unfortunately there is a hint of skunk underneath. It does blow off after a minute or two but it is there. Honey is really the only aroma. The beer is very lively in the mouth with high CO2 , slight spiciness from the rye, and a tartness from the wheat. Definite honey flavor, but it mixes oddly with the bitterness level. There is a hotness in the back of the throat that makes it seem as if there is more alcohol than the stated 6%. I really did not have high hopes for this beer but I was pleasantly surprised. Just a touch less bitterness and CO2 and this would make quite a nice beer!
