Commercial Description:
Carolus Doppelbock, die Starkbierspezialität der Binding-Brauerei, wird seit über hundert Jahren in der Vorweihnachtszeit angeboten. Ihren Namen hat sie von Carolus Magnus, jenem Mann, der im Jahre 794 die "franconofurt", die Furt der Franken, das spätere Frankfurt, gründete. Am 28. Januar 1902, dem Namenstag Karls des Großen, wurde Carolus-Doppelbock zum ersten Mal ausgeschenkt. Heute wie in den Anfangsjahren schmückt ein Bild Karls des Großen das Etikett des Binding-Doppelbocks. Gezeichnet hat es der Kunstmaler Fritz Boehle. Der Freund der Brauerfamilie Binding, von ihr großzügig unterstützt, hatte den Karolinger 1914 hoch zu Roß gezeichnet und damit dem "Carolus" ein unverwechselbares Erscheinungsbild gegeben. Und so erinnert der Carolus vom Sachsenhäuser Berg mit jeder Flasche auch an die über zwölfhundert Jahre währende Geschichte Frankfurts. Mit einem Stammwürzegehalt von 18,5 Prozent und 7,5 Volumen Prozent Alkohol heizt er seinen Freunden so richtig ein. Kenner schätzen sein dunkles Funkeln und lieben den vollmundig, malzaromatischen Geschmack. Wen stört´s da schon, dass er es auf immerhin 70 Kalorien pro 100 ml bringt und damit nicht unbedingt zu den "Schlankmachern" im Binding-Bierspezialitäten Sortiment zählt. Carolus gibt´s ab Oktober bis nach Weihnachten in der 0,5 oder 0,33 Liter Flasche und frisch vom Fass. Aber aufpassen beim Autofahren: Carolus Doppelbock hat´s wirklich in sich.

50cl bottle, as pictured. Pours a clear, dark "nutty" brown (nowehere near black!) with a big, soapy beige head. Decent retention and lacing. Aroma of malt, caramel and a bit of tobacco - fruitiness almost nonexistent. Low carbonation, thick, oily mouth feel. Medium- to heavy-bodied doppelbock. The higher abv is immediately noticeable when you first taste the beer. Sweet fruit and a malty nuttiness are very strong at first, but the mid-palate and finish are more bitter, if only mildly so. Still, the sweetish alcoholic note persists in the after taste, limiting IMHO the brew’s suitability as a session beer. When you compare it to not-dissimilar English premium esb’s or olde ales (like Fuller’s 1845 or Greene King Strong Suffolk), Carolus strikes me as ill-balanced and too sweet for comfort. Smooth it is, but the looks and mouth feel promise more than the beer delivers. If you’re drinking doppelbock solely because of the high abv, you won’t mind.

Pours almost black but with reddish tints. No real head and no lacing. Smell is very much alcohol with notes of malt, and brown sugar. Taste is the same but also some of a coffee background. Not a great doppelbock but a pretty good beer.

Beautiful light brown head. Very dark colour, almost black. Roasty chocolate aroma. Tastes the same as smells with the bitter aftertaste. Not bad. Not bad.

The bottle looks really good, the beer in the glass also. Tastes malty and strong, becomes not penetrating. Finish is a little bit alcoholic. Very drinkable and good doppelbock!

Pours a nice deep golden brown color. Aromas of rich dark malts, chocolate, fruit, and a hint of smoke. Flavor is rich with a lot of flavors to be found, chocolate, dark fruit, coffee.

[bottle] Sweet, molassesy grain aroma with detectable noble hops. Plenty of dried fruit that blends well with ethanol. Nearly opaque, clear garnet with an eternal tan, flannel blanket cover. Nice grainy flavour accentuated by a nutty oxidation flavour: dried fruit and tobacco. Coffee/chocolate notes come in with the bitterness. Medium body, medium carbonation, some lasting bitterness, but that’s okay. Quite nice, overall.

On draught at Das Wirthaus (Frankfurt). Pours an opaque black with a thick tan head. Big malty, coffee aroma. Medium-to-big body with a heavy mouthfeel. Rich dark malt flavor with a dry flavor balance and slight licorice character.
