Commercial Description:
Carolus Doppelbock, die Starkbierspezialität der Binding-Brauerei, wird seit über hundert Jahren in der Vorweihnachtszeit angeboten. Ihren Namen hat sie von Carolus Magnus, jenem Mann, der im Jahre 794 die "franconofurt", die Furt der Franken, das spätere Frankfurt, gründete. Am 28. Januar 1902, dem Namenstag Karls des Großen, wurde Carolus-Doppelbock zum ersten Mal ausgeschenkt. Heute wie in den Anfangsjahren schmückt ein Bild Karls des Großen das Etikett des Binding-Doppelbocks. Gezeichnet hat es der Kunstmaler Fritz Boehle. Der Freund der Brauerfamilie Binding, von ihr großzügig unterstützt, hatte den Karolinger 1914 hoch zu Roß gezeichnet und damit dem "Carolus" ein unverwechselbares Erscheinungsbild gegeben. Und so erinnert der Carolus vom Sachsenhäuser Berg mit jeder Flasche auch an die über zwölfhundert Jahre währende Geschichte Frankfurts. Mit einem Stammwürzegehalt von 18,5 Prozent und 7,5 Volumen Prozent Alkohol heizt er seinen Freunden so richtig ein. Kenner schätzen sein dunkles Funkeln und lieben den vollmundig, malzaromatischen Geschmack. Wen stört´s da schon, dass er es auf immerhin 70 Kalorien pro 100 ml bringt und damit nicht unbedingt zu den "Schlankmachern" im Binding-Bierspezialitäten Sortiment zählt. Carolus gibt´s ab Oktober bis nach Weihnachten in der 0,5 oder 0,33 Liter Flasche und frisch vom Fass. Aber aufpassen beim Autofahren: Carolus Doppelbock hat´s wirklich in sich.

Bottle. Pours brown reddish in colour with a small head. Roasted, malty and sweet. Slightly hoppy with notes of caramel and brown sugar. Hints of spices and raisins. Somewhat bitter finish.

A deep red beer with a thin orange head. The aroma is sweet with primary notes of berries, but also lighter notes of alcohol and metal. The flavor is sweet malty with notes of berries and metal from the alcohol. And a nice body.

Bottle (from semi-frankfurter MoritzF, Danke!) Dark ruby to deep amber coloured, medium-sized off-white head, slowly diminishing and lacing; alcoholic nose, vegetables, molasses in the aroma, too; sweet-malty, a bit fruity and sweet flavour, quite light (!) bodied; short, slightly malty-fruity finish with a faint bitter aftertaste. Not really bad, but a bit one-dimensional.....Kind of a "warsteinerized" Doppelbock !

(bottle) Clear and dark reddish amber colour with a foamy beige medium head. Moderately sweet toast-malty aroma with notes of caramel, toffee and a fruity tinge (raisin, peach). Sweet toasted malty taste with toffee and marzipan, almost full bodied with a creamy mouthfeel. Sweet worty malty finish with a dense hop bitter note. Not an outstanding but drinkable Doppelbock.

500ml bottle: dark brown in color with a full rich tan head. Not a lot of aroma. Light raisin and walnut. The flavor is a lot more alcoholic than the last doppelbock I had which was the Augustiner Maximator. Malty, yeasty flavor with a bit of dark fruits and a slight meatiness to it. Good beer but I liked the Augustiner better.

Bottle. A raisin and chalky aroma. Dark brown color with small head. Slightly sweet raisin flavor with chalky/astrigent finish. A pretty good beer especially from Binding.

Bottled(500ml). -dark amber coloured, big creamy head, caramel and light toffee aroma, roasted malt flavor, nice strong alcoholic finish.

Malty bit smoky aroma, that is hard to trace. Sweet flavor, peppery with some roasted malt. Hopbitter, slightly alcoholic finish. Nice doppelbock, but doesn’t stand out in any way. 5 4 7 3 12 = 3.1 A later sample impressed me much more. Deep dark brown color, creamy head. Roast aroma with cacao. Roastbitter flavor with dark chocolate. Malty sweetish. Medium to full bodied. Quite likeable, tasty doppelbock.
