Very sour apple taste, approaching vinegar, with cabbage notes. Nothing is left on the palate. It’s a bit like ketchup as it warms, but not necessarily unpleasant. This was my first sour ale. Not the best lambic I’ve had but an excellent one to get those who haven’t had them into this style as it has some sweetness in it. I had the one with the Monks Cafe label. Very dark mahogoney brown with a off-white and quickly dying head. Classic sour aroma, sweet and vinegary. Tart and tight onto the tongue, viscously sour of course, almost better suited for a salad dressing than a snifter, but if you’re into these beers, this is a good one. Reddish color with decent head. Incredible smell, very sweet with a slight preview of the shocking sourness to come. First sip is a SHOCK. Think sweet tarts and vinegar, but in a good way (I know, hard to picture that being good...but it really is). Sweet, sour, and refreshing. Aroma is crisp, tart, very wine-like, smells of fruit - particularly cherries. Flavor is sweet malts mixed with cherries, apples, with a hint of lemon - slight tartiness mixed with sweetness. A bit of a dry aftertaste, but finishes smooth and crisp with a sweet fruitness.
