The flavor is sweet and very acidic with strong notes of wood combined with acidic berries, which lends it a bit of vinegar towards the end. The flavor is dominated by sharpness from the wild yeast but at the same time soft and very fresh. It is pretty much like Duchess du Bourgogne - but not quite as good. Papsoe (10285), Frederiksberg, Denmark May 24, 2005 (Bottle 25 cl) I remember the first time i had this at "De Vagant", a jenever-place in Antwerpen. The bartender didn’t understand my order for a "Vlaamse Bourgogne", but a friendly regular helped to the more simple name "Bios". A red sour ale, close to the Rodenbachs although also rathe different. Vinous with a vinegary touch. And at the same time very fruity with lots of black currant in the nose. Excellent. 090594 yespr (6889), Copenhagen O, Denmark Mar 25, 2008 25 cL bottle. Medium slow/fast gusher. Pours hazy brown with a light orange hue and a lacing tan head. Light woody acidic aroma with a mild caramel and brown suagr note. Acidic to citric sour taste first. Shows a mild caramel and sugarish note midways and in the far finish. Holds a solid sourness initially and before the finish. Not as smooth as the Duchesse but nicely more dry. oh6gdx (6332), Vaasa, Finland Apr 30, 2005 Bottled. Dark red colour, huge creamy creamy head. Strong applle/cherry aroma. Strong sour apple and cherry flavour with hints of sweetness. My first thought was "very krieklike".
