Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Bottle from Liquid Solutions. Poured a bit exuberantly. Very hazy cherry amber color with a large beige/tan head. Aroma of sour cherry. Medium body with sharpish carbonation. Flavor is funky, cherry, and a bit woody. Finish is acidic, herb/hop or herb/veg, still somewhat funky. This is definitely a sour. Pretty good one.

bottle, pours a very lively foam that is much like a soda pop - head is tean with brownish patches, and very fizzy/goes pretty quickly. body ends up the color of ruddy prune juice - reddish rust color and very cloudy, lighter oarnge rust at edges. aroma is tart cherries, balsalmic vinegar, barnyard, band-aid, and what I thought was brett but actually saccharomyces cerevisiae according to the description. is that a fermented cherry bacteria? regardless, it works for me. lots of fizz up the body. flavor is astringent and tart like a dry cherry vinegar. sour and still a bit of ale-like maltyness that is dry & tart. high carbonation. funky oaky finish and dry yeasty aftertaste. this has been in the sellar for 2 years and I think it’s aged very well.

Bottle 75 cl. Courtesy of fiulijn. Pours a cloudy and opaque muddy reddish brown with a bubbly reddish head. Tart and fresh cherry aroma. Light body, dry and tart cherry accents. The finish is dry with a light tartness and hardly any bitterness. Fresh. 260309

Ruby. Gushing bottle! Long head. Aroma: Sour, dry cherries. Flavor: Sour cherries, vinigar, yeast. Tart cherry finish. Overall, it looks better than it tastes but I have had much worse.

75 cL bottle, courtesy of fiulijn. Pours hazy deep amber with a fizzy pink head. Dry cherry and vague acetone aroma. Dry lacto, brett and cherry flavoured. Clean cherry flavoured, no almondish note. Acidic and dry cherry flavoured into the finish.

Pours cloudy golden brown with no head. Nose of sour cherries. Taste is oak, dark fruits, cherries, with a strong vineous notes. Sour oak lasting finish. Very high carbonation with a medium mouthfeel. Overall impression is that the beer lacks some depth, especially on the nose, but has an interesting play between the oak and sour cherries.

Bottle. Pours a murky orange with a white head that quickly diminished. Strong aroma of tart cherries and notes of wood. The flavour is very sweet and the cherry flavours are candy-like, and funky brett tartness. A lot of carbonation in the bottle as well which is a let down, as it’s a pretty decent beer.
