Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Draft from blind tiger. Orangey. Mahogany chery taste. Sour ending. Interesting.

Bottle. Pours a murky orange with a white head that quickly diminished. Strong aroma of tart cherries and notes of wood. The flavour is very sweet and the cherry flavours are candy-like, and funky brett tartness. A lot of carbonation in the bottle as well which is a let down, as it’s a pretty decent beer.

Bottle. Aroma of sweet and tart cherries, cherry skins, some lightly medicinal cherries, but oddly pleasant medicinal qualities. Flavor very odd as the cherry turns very bitter for me. Unexpected and not what I was hoping for. Perhaps the acidity somehow is making me think bitter, but whatever the cause, the result was not great for me. The bottle is quite elegant though, a definite keeper.

Sampled from a pretty 750 mL bottle. The beer gushed out as soon as I opened it and the foam made the loudest fizzing noise I have heard yet from a beer. It sounded like those pop rocks candies fizzing in the beer. Pours a deep red with quite a lot of carbonation and a quickly fading head. Aroma of sweet cherries, sweettart candies, and a slight funkiness. Flavor of cherries, wood, and sweet candies. The flavor gets a little muddled as you go and is not as powerful as the aroma suggests. Pretty decent though. I would also like a little less carbonation!

Bottle shared at tasting. thanks. Pours a hazy orange color with a filmy beige head. Smell is tart, funky and cherry like. Taste is fruity, dry and lightly tart, but smooth edged sourness. Almost some aged caramel and tart orange flavor to it. Medium to full body with light carbonation. Just so so.

color ramato schiuma non abbondante abbasatanza persistente. al naso ciliegia poi acidulo leggero legno. in bocca la ciliegia si nasconde un po l’acidità è media un sentore anche lievemente agrumato amaro. particolare

Bottle, as pictured here, pours a dark purple/brown body with a small pinkish hued head. The bottle unceremoniously gushes all over my counter after sitting there for a few seconds. Aroma is tart, acidic,musty, and lambic-like. Body is medium, with an overly aggressive carbonation. Taste is tart cherries, musty wood, funky wet gravel, with tannic and acidic notes. Very dry throughout. Medicinal note distracts.

750, gorgeous bottle. Not sure how it was closed. Thanks, Peter! Pours a dark ruddied brown, grainy, with an opaque body. Cloudy, spotty off-white creamy head. Huge tart cherry nose. Creamy, highly fizzy medium body. Lots of sweet and tart cherry fruit and a bit of that tart bretty funk. Very smooth and approachable for as intense as the ingredients are.
