Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Gusher out of the bottle, but that’s not a surprise. Beautiful big head fades rather quickly. Body is completely thick with a murky reddish dark brown color. Some chucks visible in the body but that’s it, no clarity at all. Aroma is very bretty, it a bit harsh, a very aggressive and not fruity or pineapple-y at all. Plenty of funk that mixes with strong cherry aromas (not juicy or artificial) that are rather sweet. Some acidic tones as well. Taste losses a lot of the funk and brettt but still has plenty of thick cherry and a good malt backbone that matches well with the cherry. The mouthfeel is very overcarbonated, which takes away from the flavor a bit.

as i popped the cap, the top flew off and the bottle gushed everywhere and i ended up loosing over half the bottle, we are off to a fantastic start .. smell is hope filled, jolly ranchers, sour cherries, sour patch kids ... dark cherry juice with a light fizz appearance ... good dose of bitters with a sour back bone ... a nice sour ale that contains a great cherry sweetness/sourness but i want it bigger and bolder, but its italian and it shows it ..

750 ml bottle. A little tough to drink. I hate to think it was bad, but yeah, I got the bandage too. Remember, It’s only a Band-Aid if it is made by Johnson and Johnson

Poured a cloudy purple color. Good aroma of tart cherries. But, only the nose was good. The taste had off flavors of band-aids and medicine(lidocane or iodine) which was highly distracting making sorting out any other flavors nearly impossible. Most likely a bad bottle, I will look to re-rate this sometime in the future. drainfodder.

Bottle shared by fordest at his house. What a dissapointment. This was a highly anticipated beer of the evening. It may have been bad. I got Band-aid flavors on the first sip. The aroma was nice with ripenned cherries. But that is where the smile ended for me. Finished my sample but I was the only one. Drain poor for most. Bad bottle?

Bottle at Bruxellensis 2008, Brussels, Belgium Hazy, red body. Off-white slightly pink, slighlty brown head. Weak aroma of yoghurt , cherries. Softn, lightly sour, lightly sweet cherry flavour. Well balanced flavour. Not brilliant (lacks complexity), but good.

From bottle at Bruxellensis 2008. Cloudy, dark red-brown with a small tan head. Sour cherries nose, hint of wood. Lactic flavours, lots of brettanomyces, creating a perfect blend of dryness and fruit. A bit hard on the tongue. Convincing.

This was definitely a well carbonated beer as it almost immediately foamed up and spilled beer on the counter before I could start pouring and got it over the sink. The head is very fizzy without a lot of structure to it and despite the ample carbonation disappears after a minute or two. The head, when there, was a deeply stained, dark tan colored head that had dark patches to it where sediment had discolored it. The beer is extremely hazy and is a murky, dark amber color. Flavors of cherries are found up front, but there is lots of other stuff going on here. Soft medicinal notes, move to some sweaty-goat like notes, some cured yet slightly moldy leather aromatics and then the finish has a note that is distinctly reminiscent of the fake fruity note found in watermelon jolly rancher candy. This definitely has developed some Brettanomyces character and this and the jolly rancher note become the most noticeable part of the aroma.

Quite dry with a light sweetness to it, this beer has a lightish body, but does have a touch of density to it that keeps it from being thin. Grassy, almost plant stem flavors are found up front and this finishes with some medicinal phenolic notes that at times taste a bit like curing plastic and then olive brine. The light tartness accentuates a touch of earthy, cherry skin flavors, a touch of cherry fruitiness in the finish, a light tamarind note. This definitely has a bit of a vegetal flavor to it and it has a butyric acid induced, earthy, musky, sweaty, old, damp blanket / leather flavor to it as well.

Definitely complex, but doesn’t really work. More fruit flavor would go a long way towards balancing the funky notes here; maybe even a touch of sweetness would help, but I like that this is on the dry side. Based on potential, I will definitely give this another try, especially since I think that there is probably quite a bit of variability between batches.
