Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Second bottle, at the brewery restaurant:
The sour cherry presence was a lot better developed, the body was healthier, the overall fruitiness was a little more vinous, and the wild yeast was quite peppery and well-levelled with the rest of the flavor profile. Carbonation was not excessive either. (3.8) A LOT better than the first try of this a while ago. I guess that first bottle (which was still good) suffered somewhat from transport across the Atlantic.

My Bottom Line:
A humid wilderness smears the cherries with damp earth, band-aids and brettanomyces in this svelte and very effervescent dry Fruit Beer. (3.1)

Further Personal Perceptions:
-The fleeting foam quickly recedes to a thin ring atop the cloudy brownish red.
-This bottle too was a gusher and it was no surprise that, once tasted, the carbonation revealed itself to be quite expansive .
-I’m not sure going through all this trouble (this is an ambitious recipe) is actually worth it, hedonistically speaking. Financially though, at this price...
-The fruitiness was present, but was not entirely satisfying. I guess they are aiming more at a festive, champagne-like replacement product?
-Some tartness accompanies the piney brett notes.

gusher got lucky and opened in the kichen beige head quickly dissipatets odd sent band-aid is deffently the word for it if they had a fruit sented one it unfortanlly tranfers over to the taste sligtly dissapointed in this one high point is the creamy palate was not worth the 18.99 i paid for it but live and learn another in a growing list of dissapointing italian beers

(75cl bottle) It’s a gusher! The beige head mostly dissipates after the pour, leaving a murky pomegranate-tinted body. Aroma is medium sweet, yeasty barnyard funk, black cherry, light herb, band-aid. Taste is medium sweet, black cherry, some funk, raspberry, some tartness but no sourness, light band-aid. Some effervescence despite the low carbonation, light-medium body.

bottle poured a hazy brownish red. Sour aroma. Favor is medicinal, band-aid like and just bad. Not recommended. There are much better Krieks available. Don’t waste your time or money.

Incredible olive aroma.. such a nice surprise for a cherry flavored beer. Flavor a tart cherries. Found ONE of these left at the wine cave in cleveland. Expensive but so enjoyable.

A gusher bottle. Opened gradually by just prying the cap off a crack and letting it fizz and bubble for a while. Even so, it still flowed out of the bottle on its own accord. Sour it definitely is, sweet it isn’t. Not quite sure what this beer is shooting for. If you want a sour ale, or flemish red, Rodenbach is a better value. If you want a kriek, the more established players will probably serve you better. Enjoyable? Yes. Would I buy again? Maybe.

Bottle shared courtesy of TomDecapolis. Gusher alert. If you have one of these, do your self a favor and open over a sink. Poured a deep and muddy pinkish/reddis/brownish color with an averaged sized head. Aromas of yeast, cherries, and caramel. Tastes of cherries and a little funky. Started out somewhat sweet and finished in a nice light tartness.

Poured a murky red brown color with a small, off white head that left light lacing on the glass. Aroma of brett, leather, cherries, and light caramel. Taste of tart cherries, a bit of brett, some light nuts, and a bit of wood. Not bad, actually exceeded my expectations.
