Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Poured a murky red brown color with a small, off white head that left light lacing on the glass. Aroma of brett, leather, cherries, and light caramel. Taste of tart cherries, a bit of brett, some light nuts, and a bit of wood. Not bad, actually exceeded my expectations.

Pours a milky deep raspberry with a bubbly pink head that went away right away. Oh and by the way this one is a gusher...actually an bomb would be more appropriate...just ask hopdog I think half the bottle is still soaked into his kitchen table. Aroma of tart cherries, funky barnyard, musty basement and some alcohol. Flavor was kind of solventy, plastic, horseblanket, some medicinal cherry, reminds me of those sort of wax lip candies I used to get as a kid.

750 ml. Turbid reddish-brown with a large head (might want to open this one outside; a bit effervescent right out of the cork!) that disappears fast. Sour fruit with old leather aroma. Flavor is the same, with some sweetness. Pretty one note taste, and it is OK for a refreshing splash, but gets a bit tiresome and overdone. Palate is light, acidic-tingly and astringent with a chalky-dry finish.

Bottle. Pours a clear pinkish red with a large light pink head that mostly lasts leaving good lacing. Aroma is acidic with notes of sweet cherry and a hint of wild earthy yeast. Taste is the same as aroma. Medium to thin mouthfeel with tingly carbonation and mild acidity. Very good.

Old-ish botte sampled at Birrificio Italiano Brewpub. Great thanks to Agostino, who treated us with this. Murky ruby red-ish colour, with only laces on the surface. Aroma is mostly of glue and cherry. Subtle, delicate sourness, that went pretty well with the panacotta we were served. Mouthfeel was fairly sweet, yet light on its feet. Wonderfully fruity/berry backbone of cherries with a slight touch of almond lurking behind. Finish was long and very pleasant.

25 oz bottle, via dsnowden. Enormous gusher alert!! The kind of gusher that looked like a bottle of champagne opened after a World Series Championship. The kind of gusher that left a large slightly pink tinged stain on my ceiling about 3-4 square feet in area. BE VERY CAREFUL WHEN YOU OPEN ONE OF THESE!! With half the bottle now all over my kitchen, I’m ready to enjoy this guy. Pours a very murky and cloudy ruby red with a pinkish tinge under a minimal ring of pinkish foam. No visible carbonation (post explosion). Nose is dryish tart cherry and some risidual sugars. Light yeast, cherry pits, light oak tannins. Almost Flemish Sour like in its entirity. Flavor is pretty nice, walking the line between tart and sweet with lots of fresh sour cherries. A nice drying oakiness on the finish with a touch of brett maybe? Mouthfeel is sweet and slightly sticky up front, drying out a little on the finish. Nice fine pinpoint prickly carbonation. Really pretty good, too bad I only got half of a bottle to enjoy.

The aroma is funky with wild yeast and over ripe cherries. There is also a sugar element. The appearance is dark maroon with a nice head. The flavor is like plastic with all the funkiness of the aroma. The palate is watery. This stinks.

Too funky for me, smells wet wood chips and moldy basement. Slight flavors of cherries, vanilla. not much else to say, Unless this is your thing, not very recommended.
