Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

pours a dark red/purple with a huge, fizzy pink head that makes a lot of noise. aroma of loaded with cherry, brett, wood, olive, basement funk. flavors are cherry, olive, wood, and plastic. barely sour, acidic, very carbonated palate. tastes like green olive juice.

Served in my New Belgium flute glass: A slow and steady foam from the bottle but not a real gusher, a deep ruby hue with a fizzy lasting pink head and okay lace. The aroma has major notes of tart aromatic cherry, a beautiful balance of earthy and moderate funk along with a hint of woody vapours, nice and inviting indeed.

The taste is spot on with the nose, lovely balance of sweet and tart cherries along with moderate depth provided by the yeast character. What stands out for me is the dry and woody finish with a touch of anise spice. Not a cloy or syrupy beer and for that I am pleasantly pleased. Borders on being a Flemish Sour... and if not for the price this would easily be a beer I would seek out. Buy one and share with friends.

When opened, a lava like flow eminated from the bottle, a slow yet very steady flow. Beatiful colors when poured, an interplay of pinks a creams. Beer is very murky looking. Aroma is not subtle, as the cherries are very apparent. Notes of ripe plums, some vanilla and earth, and some funk. The flavor is ominated by the fruit initially, eventually yielding to hints of oak and a subtley bitter finish. Much better than anticipated.

Tall pink and cream colored head is fizzy and somewhat creamy, receding to a medium head at a slow pace. The body is a very cloudy, completely unfiltered deep garnet with muddy brown hues. The gargantuan head initially releases huge fruit aromas, mostly comprised of tart black cherries with hints of strawberry and kiwi. Also noted are spicy yeast, mild alcohol, floral notes, earth, wood, subtle orange peel, saccharomyces, funk, barnyard, leather. Incredibly potent, also quite surprising. This has a fresher vibrancy than I expected. With warmth the aroma is dominated by yeastiness. The flavor is also very yeasty, very tart and moderately to heavily sour. Sweetness is high but alcohol dryness and sourness cut through it admirably. Cherries are still the force they were in the aroma and seem a touch less tart. Saccharomyces are well integrated into the flavor and tamed by heavy yeast. This is indeed a strange one, but I enjoy it. Oak is very soft in the flavor. Additions of caramel and sweet lemon. Alcohol warmth is mild to medium. Bitterness is mild. Acidity is high. Flavor is mild and seems restrained, except for tartness, for the most part. The mouthfeel is incredibly carbonated, clouded with yeasty particulates. Medium to medium-full bodied, extremely high and fizzy carbonation (in fact, that’s probably the only thing that keeps this from developing a syrupy palate sensation). The finish is soft, yeasty, cherry pulp and spicy phenols lingering. I’m impressed. The bottle was certainly overcarbonated, but that didn’t detract from the enjoyment and a new taste sensation. A fun beer.

(750ml bottle) Pours a hazy deep ruby body with a medium pinkish head. Aroma of cherry, earthiness, and musty. Flavor of sour cherry, oak barrel, and some funkiness with a dry finish.

Sweet, sour aroma, slight farmy aroma. Pours cloudy purple/dark red. Sour and crisp, fruity grapes, cherries, currants, dark berries, with a tart finish.

Hearty pop of the cap with a delayed, mild gusher (slow enough that I was able to sip quickly, but not forced, until the glass was ready. Ruddy brown color with a full bubbly head of taupe/pink bubbles that diminish quick quickly leaving a small lid and then a small ring. Horseblankets abound in the aroma, with plenty of tart sweet fruit. Simple fruit flavors in the front with apples and pears. Some iodine seems to come in right after and reminds me of my youth. Some bitter sweet cherries come out in the finish and linger, yet there is that medicinal quality that seems to again take me back to my youth and the wonderful flavors of prescription cough medicine. As it warms some other fruit seem to come out, with plums over-ripe peaches and grapes soaked in cedar. The yeast is harsh; the flavors full, but too diverse; and this just seems like it is young and needs a few years. Not sure if I’ll take the chance with a long term relationship with this one.

pours with a cloudy reddish-brown body topped by a quickly disappearing head wtih little lacing. It’s sweeet yet slightly sour with a note of ass and a little cherry. meidum bodied and dry.
