Commercial Description:
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Bottle 75 cl. Courtesy of fiulijn. Pours a cloudy and opaque muddy reddish brown with a bubbly reddish head. Tart and fresh cherry aroma. Light body, dry and tart cherry accents. The finish is dry with a light tartness and hardly any bitterness. Fresh. 260309

75 cL bottle, courtesy of fiulijn. Pours hazy deep amber with a fizzy pink head. Dry cherry and vague acetone aroma. Dry lacto, brett and cherry flavoured. Clean cherry flavoured, no almondish note. Acidic and dry cherry flavoured into the finish.

Bottled, thamks fiulijn! Cloudy red-brown, brief head. Aroma of ripe cherries. Dryish and fairly clean. Tart with light notes of lemon and wood, a bit salty with solid body. Fresh and interesting with a lot of flavours.

Bottle. 75cl. Unclear medium red color with a average, fizzy, fair lacing, mostly diminishing, off-white - light red head. Aroma is moderate cherry, barnyard, vinegar, acidic, sour, wood, notes of medicine. Flavor is moderate to light heavy sweet, moderate acidic and acetic (vinegar) with a average to long duration, and a dry finish. Body is medium, texture is oily, carbonation is soft to flat. Muddy dark cherry color. Nice aroma of malt, Bretts, cherries, cobwebs, dough. Medium body strength, but well structured, with caramel flavor, light sweetness, tartness, light astingency, light fruits. Correct bitterness, with a cheesy final astringency, light. Very good.

Cloudy dark amber color; huge creamy head; very lively.
Wonderful aroma, softly sour, a bit fruity, with a very light perception of flowers (violets). Persistent: it lasts till the end!
Medium body strength, high carbonation; it’s quite sour, with a light cherry fruitness, and most of all it has an extreme astringency, yet all the flavors fight for the balance.
Very bitter final, and astringent as well.
A big thank to Agostino, the brewmaster, for sharing this wonderful bottle, one more excellent brew from B.I.

(75cl bottle) It’s a gusher! The beige head mostly dissipates after the pour, leaving a murky pomegranate-tinted body. Aroma is medium sweet, yeasty barnyard funk, black cherry, light herb, band-aid. Taste is medium sweet, black cherry, some funk, raspberry, some tartness but no sourness, light band-aid. Some effervescence despite the low carbonation, light-medium body.

(750ml bottle) Pours a hazy deep ruby body with a medium pinkish head. Aroma of cherry, earthiness, and musty. Flavor of sour cherry, oak barrel, and some funkiness with a dry finish.

Bottle shared courtesy of TomDecapolis. Gusher alert. If you have one of these, do your self a favor and open over a sink. Poured a deep and muddy pinkish/reddis/brownish color with an averaged sized head. Aromas of yeast, cherries, and caramel. Tastes of cherries and a little funky. Started out somewhat sweet and finished in a nice light tartness.
