Hay, mandarin orange, lemon zest, floral hops, peppery esters, and spiced apples comprise the polished nose. Fluffy carbonation. Bottle conditioned. Snappy malt entry is enhanced by a well-rounded fusion of baked apples and a fermenting wheat tartness kissed with dried pineapple. Fine attenuation. Brightly floral and flavorsome in the hop department, but the bitterness is restrained and largely absorbed by the slightly flabby fruitiness. Hop bitterness is replaced by a firm and appetizing mineral characteristic. Crisp malts and a firm dustiness keep much of the flabbiness at bay, however. Aside from the crispness, the malt provides support and structure, and possesses just enough restraint so as to not overwhelm the array of nuances. Orangey, rosewatery, succulent and quenching as all get out. Metallic zing adds to the quenching and well-rounded nature. Finishes slippery with honeydew and cantaloupe which are followed up by inklings of dry, pillowy malt and dusty esters. Surprisingly authentic, and thankfully it’s not the banana and yeast explosion I was expecting. Who knew Bison had it in ‘em?

Aroma is yeasty and spicy with notes of citrus, sweet malt, black pepper, and earthy hops. Taste is yeast, citrus, black pepper, earthy hops, and light acidity. The farmhouse ale had a light crisp taste with a nice earthy hops. It poured an orangey yellow with a massive white head.
