Commercial Description:
In the past era, hard working rural "Saisonniers" consumed 5 liters per day of this style beer. We re-created it for today's modern worker using Belgian yeasts and sour mashing for a refreshing spiceness and acidity to enliven your palate. Bottle conditioning leaves some sediment, so decant by slowly pouring into a wide mouth glass. Refill this bottle at your favorite local brewery.

Deep gold. Tightly-packed white foam retains very well. Hay, mandarin orange, lemon zest, floral hops, peppery esters, and spiced apples comprise the polished nose. Fluffy carbonation. Bottle conditioned. Snappy malt entry is enhanced by a well-rounded fusion of baked apples and a fermenting wheat tartness kissed with dried pineapple. Fine attenuation. Brightly floral and flavorsome in the hop department, but the bitterness is restrained and largely absorbed by the slightly flabby fruitiness. Hop bitterness is replaced by a firm and appetizing mineral characteristic. Crisp malts and a firm dustiness keep much of the flabbiness at bay, however. Aside from the crispness, the malt provides support and structure, and possesses just enough restraint so as to not overwhelm the array of nuances. Orangey, rosewatery, succulent and quenching as all get out. Metallic zing adds to the quenching and well-rounded nature. Finishes slippery with honeydew and cantaloupe which are followed up by inklings of dry, pillowy malt and dusty esters. Surprisingly authentic, and thankfully it’s not the banana and yeast explosion I was expecting. Who knew Bison had it in ‘em?

Bottle. Murky amber body, with a frothy white head. Smell is warm cider and a dash of ball sweat. Taste is pretty much pure cider; fruity and spicy. Very easy on the palate. Finishes smooth and silky. Session saison potential.

Bottle. Hazy golden colour with a weak head. Fruity and butterish aroma with hints of spices. Flavour of spices, coriander and little citrus. Not my kind of type.

2007 Bottle. Pours a clear golden with a small short lived white head that leaves some lacing. Aroma is yeasty and spicy with notes of citrus, sweet malt, black pepper, and earthy hops. Taste is yeast, citrus, black pepper, earthy hops, and light acidity. Medium mouthfeel that finishes somewhat dry with a well balanced bitterness. Good.

I’m usually a little disappointed with Bison, but this one was good. The farmhouse ale had a light crisp taste with a nice earthy hops. It poured an orangey yellow with a massive white head. I had low expectations for this one and was pleasantly surprised.
