Commercial Description:
Our organic IPA uses Tomahawk, Cascade, and Centennial hops for a rustic, rough-hewn hop character that pairs great with food or relaxing among friends. Prominent citrus and pine aromas and bitterness that is not over the top balances this medium bodied copper-colored brew.

Felt in the mood for some new IPAs, so I grabbed some random ones i hadnt tasted before off the shelf. This one was not a particularly good pick. Has a bitter hop flavor in the background, but it just doesnt tie in well with the rest of the beer.

wow, this is nice. beautiful deep golden color and clarity. wee bit of toast and assertive but not overbearing malt character of straw, biscuit and light caramel fringed with understated phenols. The hop mix is beautiful. I can’t make it out at all but with neither a west coast or british signature and seemingly a blend of two bold complements. Wow, this is very nice without being over the top.

The aroma has caramel, nuts, pine hops, and bread. The appearance is deep amber with a small head. The flavor is fantastic it just needs a wee bit more hops but the buttery, caramel taste is great (I detect some nuts in there too). There is some pine hops taste. The palate is smooth. This is yet another really good organic beer by Bison.

22oz bomber, no date--courtesy of Jason from Knightly Spirits. Pours a clear orange brown with a small light beige head. Aroma of caramel and bready malts, some pine, floral and earthy hops. Flavor much the same, slight spicy and floral hops in the taste, a fair amount of bitterness about halfway though, thoug quickly receds. Very slight lingering bitterness, finish is even a little chalky. Carbonation is a little too low, medium bodied. An OK beer, nothing special.

Color is unusual -- kind of pale brown, head was white and medium in both size and longevity, not a lot of lace. Lots of bubbles rise from the bottom. Aromas were malt, grass, citrus, apples, charcoal, yeast, pine and alcohol. Flavor is excellent -- fair amount of smoky and nutty malt, bitter grapefruit hops, some summer fruit, and a bit of yeast. Palate was good, with fairly high carbonation, but not too high.

Aroma is light and airy, reminds me of the smell of wheat and flowers. Flavor is fairly bitter hops, wheats, floral. Bitterness lingers on leaving you wanting more. You would never think that this beer would have such a high ABV, I cant find a hint of the high content in the flavor. A great sessional for the boat dock or just on your back deck on a hot summer day. My first Bison Beer. Why this is a winter seasonal is beyond me, but i liked it.

Bomber bottle and served in a standard pint glass: Displays a bright coppery hue topped by a tight creamy lasting head and excellent lacing. The aroma has notes of aromatic and slightly spicy hops, caramel and biscuity malt, earthy yeast esters and a dash of pear. The flavor profile is a simple combination of sweet bread and very mild bitter with a hint of pepper on the finish. There is a juicy fruit note through out the tasting. The feel is creamy and very smooth, a solid session brew despite a slightly higher than normal ABV, some metallic and chalky notes on the aftertaste. Not for hop-heads for this is really more English Pale Ale than India Pale Ale. I found it tasty enough to enjoy on a lazy summer afternoon.

My #200 California rating.
