Commercial Description:
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Batch 1 - blank cork - 9.6% ABV

Batch 2 - #2 on cork - 8.9% ABV

Batch 3 - #3 on cork - 10% ABV

Batch 4 - #4 on cork - 9.5% ABV

Batch 5 - #5 on cork - 10% ABV

Black pour with a big, lasting, rocky head. The aroma is HOT bourbon with a little dark roast. Slightly metallic and vegetal. The flavor is the same but buttery with lots of vanilla and oak char but the bourbon is much more balanced than the aroma. Medium, oily body with lots of carbonation.

Metro Tasting. Poured a dark brown/black with a big fluffy tan head. Aroma is big dark fruits, banana, plums, raisins, vanilla and bread. Taste is big vanilla, bourbon, banana bread and chocolate. I actually thought this was closer to a barrel aged quad than an imperial stout. Pretty tasty though.

From a 750 ml bottle acquired at the brewpub. The pour has a ton of foam, about 3 fingers worth at least. For the record, this bottle cork had a #6 on it. The beer is incredibly dark. The taste has an initial sweet oak barrel flavor with a good bit of raisin or a even prune. The alcohol (whatever it is for the #6 batch) is hidden quite well. There is a slight hint of a spicy aftertaste, but the raisins are more prevalent. A very enjoyable and memorable brew.

750 ml corked bottle. via Secret Santa Summer 2009 (big thanks!). Pours a near black with a huge tan head that dissappears fairly quick. Taste is bourbon, wood, chocolate, roasted grains, licorice. A bit too much on the carbonation though. Body is medium. I just did a nitro syringe and wow, this beer is now to die for!! Complex....figs, dark chocolate, dates, dark chocolate, wood, bourbon, dark chocolate, wood, bourbon, dates, dark choclate....mmm..good. love it.

Draft. Pours a very deep brown with a creamy tan head. Big bourbon nose with some roasted notes lurking beneath. Low carbonation with a medium-rich, boozy mouthfeel. Bourbon (and lots of it), vanilla, a bit of oak, and roasted malt on the palate. If you don’t like bourbon, this one isn’t for you. Medium, boozy finish. This one hot with alcohol and loaded with bourbon, but I think it could age quite nicely. It says there are 89 IBUs in this, but I sure couldn’t tell.

Bottle from Dkachur. Finally I get to try one of my personal white whales. Dark brown pour. Big tan head. Tons of bourbon up front. I mean LOADS of delicous bourbon! Oak, vanilla, and some great roast. Flavor is heavy on the bourbon wtih tons of vanilla, oak, toffee and roast. A really nice beer. Finishes a bit hot, but in a good way for the most part. I hope I get another bottle at some point. Very very good.

Strong bourbon smell on the nose from the nice fresh barrells they get. So velvety chocolately smooth. Saying that this is lacing the glass nicely would be an understatement. Beautiful! Full bodied with a nice dark color. Also getting a bit of sweet fruits on the palate there as well. Nice one highly recommended.

From the brewery 4-19-09. Black with streaks of red and a nice tan head. Aroma is oak and vanilla. taste is the same plus wonderful malt, chocolate and a hint of dark coffee. Very nice.
