Granted it was a 1989 bottle, but was hoping a tiny bit of fizz was left in it. Very cloudy walnut color pour. Slight funk in the nose, with a subdued sourness. The the color is brown and it has no head. The aroma is of wood and ammoniac. The flavor was sour - as it is supposed to be - but with strong notes of ammoniac. The aroma is woody, oakey and slightly sweet yet tart with a slight mustiness and cherry notes. Just the merest hint of cherry remaining. Built upon a very smooth mellow lambic. Not overly tart or aggressive (cantillon peppery character) This is some pretty sexy stuff. One of the graduate students in my department cracked this bottle (unsold stock from a shuttered beer/wine store) after a slideshow. Very tasty after ~15 years. Poured cloudy orange-red with a quickly dissipating head that reappeared with a swirl of the glass. Loaded with yeast sediment (and a few chunks). Classic lambic aroma, very sour and tart with musty cheese rind notes. Cleary the sourest lambic I've tried, with an almost puckering sour, tart, woody flavor with cheese rind and dust. The cherries added to the tartness but their presence was surprisingly subdued; this is no "sweet" lambic, and the fruit flavor has all but vanished in the sour depths. This was a "love it or hate it" experience for those who tried it; I happen to be in the former camp. Nicely carbonated and a real treat!
