Sort of sweet, sort of tart. The acidity becomes stronger as it sits. The woody, barnyard elements are quickly washed away by the acidity. Even some of the cherry characteristics are lost. Very funky aroma with a tart sourness but also a candied sweetness. Full and heavy of cherries, like cherry candy with a sour touch. Extremely complex. Flavor is tart and very dry with lots of fruit, not just cherries, but other kinds as well. Grapefruity with a dry woody note and a tone of earth and wet cork.
