The aroma is pretty awesome too. Sour, tart, acidic, funky cheese (aged Brie, Blue, and aged Havarti). The flavor is sour, tart, and acidic. Rubbery, wooden barnyard aroma, quite mild. Bitter metallic wooden taste. Not so sour, but kind of tart. The wood really dominates. Kind of thin-bodied. Dry, metallic wooden lemony aftertaste.
