Commercial Description:
This Trappist style ale was brewed specially for Bottleworks in the tradition of "Notre Dame de St. Remy". Filled with flavors reminiscent of figs, banana, chocolate. 750, corked, baled, and foiled. Thanks, T! Pours a cloudy, ruddied dark brown, with scant ruby highlights. Thin, moussy film. Huge buttery, nutty, caramelly, strawberry, and balsamic nose. Medium body with soft woolly carb, but still plenty of it after three years. Sweet dark pitted tree fruit, nuts, balsamic, and strawberry on the mid-palate. Long nutty finish. Wonderful.

Dark red pour with a big beige head. The aroma is spicy and vinous with notes of grapes, sweet dark bread, tobacco and brown sugar. Very layered with a bit of age/oxidization starting to show. Sweet and malty with figs, tobacco, grapes, plums, prunes, brown sugar. Smooth with medium carbonation and a little alcohol warmth. I thought this was doing very well at the time. It was pretty damn good.

750mL bottle, courtesy of jjpm74. Thanks, John! Pours a murky, brownish color; light-tan head with patchy lacing. Toasty aroma, showing nougat, milk chocolate, and sweet bready malts. Medium-to-full mouthfeel: chewy breadiness, brown sugar, maple syrup, and sweet maltiness at the core; slight oxidation; very chewy caramel and sweet brown sugar maltiness. Messy, chewy quad. Lengthy finish: brown sugar, sweet malts, and breadiness.

Bottle@Dr.Bills Pours dark redish brown with a bubbly thin head. Slight sour smell. Starts out sweets with figs and chocolate and then drys up at the end to make one very drinkable brew.

Mesa Gathering October 07. Sweet molasas and licorice aroma. Black body with tan head. Good thicker body texture. Sweet licorice and roasty flavors. Sweetness left on the palate. Alcohol noticeable as my notes went down hill from here. Usually do aftter a real good one.

750ml bottle. Poured with large light tan head. Aroma of vanilla, caramel, banana. Flavors of dark fruit, bananas, caramel, chocolate and vanilla. Very creamy texure. Has gotten more complex since my first tasting over a year ago. All in all one of my faves. Great for the holidays with dark chocolate. Have one more bottle. Will cellar til next year, should be even better.

mesa gathering. graciously provided by hopheadinaz. my clear favorite of the day....pours a cola color with a small tan head. aromas abound...wood molasses, brown sugar, rich malts, vanilla and bananas. (bananas frikken foster!) more bananas in the flavor with molasses, dark dried fruit (figs and dark raisins), chocolate, dark soy,yeast and spiciness, nuts, cola/root beer and possibly licorice?. the list could go on but i was too content to write anything else at that point. creamy texture with big acidic carbonation. dry finish with some lingering dried fig flavor. it leans on the sweet side but it’s certainly not sticky or unwelcome. reminds me of a mix of dunkle/baltic/belgian...very unique...thanks again.

From a 750mL Bottle. Generously shared by Dr. Bill in a VI, VII, and VIII Anniversary side-by-side tasting. Slightly murky, caramel hazelnut colored pour with a healthy finger of off-white head. A fruity nose of coconut and apples jumps out of the glass initially. Green raisins, vanilla bean, and pear follow soon after. A hint of alcohol noticeable, but a plethora of light sherried fruits take the limelight. The lightness of the fruit character seems a bit lighter than the color would suggest. Medium light bodied, crisply carbonated mouthfeel. Lots of banana and coconut flavors up front on the tongue. A hint of leather and lots of dry, nutty mid-lavibond malts. Light chocolate nougat dipped in gentle caramel with a mild caress of fruity yeast esters. Pleasantly dry in the finish, but it gets a touch warm in the final smack. Thanks, Doc!
