thedm (3407), Fort Wayne, Indiana, USA Jun 24, 2008 Draft at the brewery brought out by the head brewer Anthony Carollo. I was on a training trip to Schaumberg, IL when I met a few fellow trainees. We went out to sample a few of the loacal brews and wound up at the Brass. After one brew, the head brewer came out and politely introduced him self and eventually offered us a special beer he had brewed but thought overcarbonated. He stored it for a while and decided to sample it on us. It was received wildly enthusiastically by the group. It poured an opaque black colored body with no visible carbonation and a good lacing. It had a bourbon dark malt aroma. The mouth feel was tingly from start to finish with a thick malt backing. The flavor contained an overpowering bourbon note that unfortunately, the group thought was its major fault if you could call it that. Just a little too much we thought. It also had notes of dark roasted malts woody oak and oatmeal. If it was overcarbonated at one point, it is not now. Very yummy indeed and the best brew I have ever had from the Brass! Great Job Anthony! Chicagoland, get out there and ask him for some ASAP! You’ll be glad you did!
