As with the mythological guardian of Hades, it is best to treat this heavy hitter with respect and caution. It is innocently blond in color, and deceptively smooth. Beware!

Musty, yeast aroma -- doughy, light esters and phenols. Very pale clear yellow. Nicely balanced between sweet, bitter, tart and then briny at times. ABV apparent, but it only seems strong in the finish. Fruit notes, light banana. Perppery finish. Medium body.

Golden ale with a lacing white head. Light maple aroma. Good hopy malt in mouth, nice alcohol warmth and notes of candied plums. Good tripel. On tap at BCTC 2006.

Golden Orange, Fruity scent. Aroma was of light citrus and a little apple and slightly cheesy. Hoppy flavor with some "oily" feel; lightly corn and sweet wheat. Slightly flat beer, little to no aftertaste, with a "gummy" mouth-feel and flavor.

Light clean trip. The taste was very flowery but musty, which did healp that much.

Sampled on draught at the brewpub. Pours to a beautiful, bright, golden color, with a white head that fades, and a moderate amount of carbonation. The nose of this beer is excellent with aromas of pale, and sweet malt, paired with earthy yeast, and peppery alcohol. The palate is firm, with lots of good sweet and pale malt flavor, along with flavors of candy sugar. Cerebrus finishes with more pale malt flavor up front, then ends with some earthy yeast flavor, and peppery alcohol. Very impressive domestic example of tripel. Went very well with the oyster bacon hash on the bar menu. A wonderful aperitif, and after dinner drink as well.

Tp. Golden clear pour with a thin white head. Taste of a classic abbey. Sweet and aromatic. Very smooth finish. Quite the nice brew.

On tap at the Maryland Brewers Oktoberfest 2003. This beer rocks! Crystal clear, very light yellow ale. Nice, creamy, white head. Mostly lasting with minimal lacework. The aroma is interest and good. Notes of jalapenos, Geueze and chardonnay. The high ABV is not evident in the nose. Tasty. Very sweet up front. Honey and alcohol notes. Well-bittered. Full-bodied with a creamy mouthfeel and fizzy carbonation. Short, astringent, dry finish. World class brew!
