TheBeerLover (1013), DC Metro Area, USA Feb 10, 2006 Sampled on draught at the brewpub. Pours to a beautiful, bright, golden color, with a white head that fades, and a moderate amount of carbonation. The nose of this beer is excellent with aromas of pale, and sweet malt, paired with earthy yeast, and peppery alcohol. The palate is firm, with lots of good sweet and pale malt flavor, along with flavors of candy sugar. Cerebrus finishes with more pale malt flavor up front, then ends with some earthy yeast flavor, and peppery alcohol. Very impressive domestic example of tripel. Went very well with the oyster bacon hash on the bar menu. A wonderful aperitif, and after dinner drink as well. SeanHolland99 (5), Maryland, USA does not count Nov 22, 2002 Yummy. Crystal clear, very light yellow ale.
Nice, creamy, white head. Mostly lasting with minimal lacework.
The aroma is interest and good. Notes of jalapenos, Geueze and chardonnay. The high ABV is not evident in the nose.
Tasty. Very sweet up front. Honey and alcohol notes. Well-bittered.
Full-bodied with a creamy mouthfeel and fizzy carbonation.

The Brewers Art has a way of hiding the alcohol, until about two hours later. This is a fun tripel. Enough malty character to keep you going.
