Commercial Description:
During the fermentation of the first batch of this Abbey-style dubbel, the yeast «died» and was «resurrected» by brewer Chris Cashell. This beer is not unlike those that certain Belgian monks have been brewing since the 16th century. Made with five types of barley malt and lots of sugar, this beer is quite strong and flavorful, without being too sweet.

KSBF 2006. Pours a hazy golden amber with a creamy off white head. Aroma was very grainy, pils malt, dark fruits, Belgian yeast and bready. Flavors of fruity, Belgian yeast and lightly fruity.

Medium red out of the tap, with quite a large head - yeast, brown sugar and christmas cookie-like spices dominate the aroma - a nice warming herbal/spice quality is the best thing about this beer - not overly sweet, as can happen with this style - actually a little dry, with chocolate notes coupling well with the warming spices - candi sugar comes through, with some caramel and plum - quite good.

Draft.clear orange with nice head. Nutty/malty smell. Buttery nutty taste with clean sweet finish. At 1st I didn’t think much of this beer, but as continued to drink it it become quite good.

Definitely coloring liek most Abbey Ale’s I;ve encountered, however, servered in a lager pint glass did not do it justice. Ended up being more bitter than I would have hoped. Chewry sour caramel flavors, with some fruits such as apple and grape. I’d rather try this at the Baltimore downtown location than a local bar where I got this. Nothing spectacular, but a good attempt. (Tap 09/01/2006)

Not as dark as I would have thought. Fruity with a bit of bitterness, but also some buttery notes. Yeasty. Good but not quite up to the Ozzy. (on tap at restaurant)

Clear, stained cherrywood. Very little head. Really comes across like a brown ale. Faint aroma. Lacks much of the yeast deriven character of the style. Not bad, but a little boring.

On tap Max’s Taphouse. Pours a murky copper with some head and lacing. Big fruity nose. The flavor has fruit and spices with notes of brown sugar. Nice beer.
