Commercial Description:
During the fermentation of the first batch of this Abbey-style dubbel, the yeast «died» and was «resurrected» by brewer Chris Cashell. This beer is not unlike those that certain Belgian monks have been brewing since the 16th century. Made with five types of barley malt and lots of sugar, this beer is quite strong and flavorful, without being too sweet.

Bottle gift from Glen. great Head and lacing, and a nice mellow double, not too high in alcohol, belgian yeast is modest so more a mild with more hops and less medicinal notes

A dark amber ale with a thin white head. A good caramel malt aroma with light butterscotch. Not very Belgian, more like a jacked-up Irish red, buttery, strong alcohol. Not my favourite. On tap at brewpub, Dec. 28 2008.

750, corked and baled. Thanks, BeachBum25! Crystal clear dark amber with ruddied highlights. Thin gray rim. Tripel-y nose of dust, green apples, and bubblegum. Creamy medium body. Sweetness is very subdued on the mid-palate. Some resiny hop comes up over the sugars. Mild nutty finish.

Draught at the brewpub. Dark orange-amber with a small head. Light aroma is a bit fruity and herbal but hard to make out. Dry flavor, with a mix of light caramel, distinct yeasty character that blended with a woody bitterness in the finish. Pretty light in body and character overall. The yeast character was similar to their pale ale and I wasn’t too hot on it.

Draft. Pours amber with thin off white head. Aroma of spices. Taste is heavy with spice and burnt malt. If I had a drain I would have dumped it. Not sure if the keg was old or this is what they were going for. Not good.

This poured burnt orange/amber in color with a thick fluffy head that fades but a small head remains. The nose shows off aromas of yeast, candi sugar, burnt butter, orange pulp and spice. In the mouth this was medium-bodied but seems old and maybe oxidized a bit (or heat damage). The palate was rich and smooth with plenty of carbonation. It just didn’t seem as fresh as I would expect.

750 ML Bottle-Cloudy golden color w/a moderate white head & good lacing. Light, citrus, winelike aroma. Fairly dry, particularly for a Belgian Type Brew, w/a winelike flavor. Traces of white grape, & light citrus, kind of creamy w/a lot of carbonation. Had some spice to it, was a little cold when I first poured it, really perked up as it warmed. A little different than a lot of Belgians, but quite good.

On tap at the brewpub. Touches soft cotton and apple in the nose. Clearish brown-red, with a white rim. Flavor is fresh and lightly creamy. Dry, light, cereal-bright ester and phenol glow. Fruity in great ways, yet showing good malt complexity. Well-integrated alcohol. Finishes dry and with a nice juicyfruit kiss. Solid. Comes across as more of a soft, belgian brown. Misses some of the raisin and dark sugar character I would expect from the style. Still delicious.
