Commercial Description:
Our new Skull & Bones series pushes the limits of beer to an entirely new level. Great time and care is taken by our brewing staff to create each keg individually. Blended in oak barrels, aged for a minimum of six months, gravity fed, hand packaged, keg krausened for a secondary fermentation, and naturally carbonated. Wild yeast from Cheyenne Canyon, Brettanomyces, and a cocktail of Belgian microbes lead the enormous amount of flavor and unique character. We challenge the palate of all beer loves providing you with the most complex beers we have ever served. These select Belgian ales will be available once a month, and on draught only.

Bottle. Pours amber to copper with a tall off-white fizzy head. Sweet cherry and fruit hop aroma with a grain malt nose. Sour cherry flavor with a citrus hop finish. Fizzy and medium bodied, lively carbonation.

tap at brewery-pours a cloudy light orange with a small wthie head. WOW-bigtime bubblegum aroma-this is the best example of a bubblegum aroma i have ever had. Slightly sour flavors, mostly grassy, bubblegum, clove, cinnamon, and brett. This is truely a unique beer. Kinda a mix of a flemish sour ale, fruit lambic, and belgian wit all in one with 3 equal components. Crisp, light palate with lots of carbonation. The vineous oak aging comes out as the beer warmed. Im glad i got the chance to try this one!

Draught, Bristol Brewpub, Colorado Springs. Head is initially average sized, frothy, off-white, mostly diminishing. Body is murky dark yellow. Aroma is moderately malty (toasted grain, caramel), moderately yeasty (barnyard, horseblanket), with notes of lemon peel, cask wood, and nutmeg. Flavor is moderately sweet, moderately acidic, lightly bitter. Finish is lightly sweet, moderately acidic, moderately bitter. Medium body, watery texture, lively carbonation. This is an interesting blend of styles...somewhere between a gueuze and a saison, but not fully either. Initial waft is gueuze-like, wild yeast is obvious, but there seems to be a more substantial malt base here, and it’s not as sour as most traditional gueuze (though definitely has plenty of pedio and/or lacto). And it has a fairly hop-bitter finish, making this dry beyond tart. This is just short of excellent. Jason & Co. are making some really cool stuff these days! I had an opportunity to also sneak-peek the upcoming fall release, S&B Cuvee (Special Strong Dark aged on cherries), and the 2006 offering, Black Kriek (not yet sitting on cherries, very very sour). Hopefully some of these will start being bottled!
