Commercial Description:
The second collaboration between Garrett Oliver and Brasserie d’Achouffe. Brewed with Belgian dark candi sugar and a dash of organic Spanish thyme.

CBF07 sample from tap. Pours amber with some white head. Aroma is slight metallic and hoppy, some malt but not dominating. Flavour is malty, sweet with some slight notes of dried fruit and spices (thyme?). Finish is soft malty.

Draught at Københavnske Øldage 2007. Clear amber - white head. Fruity, apple, yeasty, licorice, wheat, sweetness, spicy. High carbonated. A bit boring - belgian style !!

Average beige creamy head that mostly diminished. Good lacework. Clear sparkling body with an amber colour. Caramel, fruit, apricot, spice, herbs. Medium to full bodied with an average carbonation. Well balanced between the sweet and bitter flavour. Nice sweet apricot finish.

Sampled on 2/16/07 on tap at Max’s 3rd Annual Belgian Beer Festival: Pours a transparent bronze with a well-lacing frothy white head. Aroma of lightly sweet candi sugar and caramel malt has a touch of toasty notes. Starts lightly sweet and fully carbonated with some earthy bittering hop balance and mild coriander spice toward a drier, bittersweet toasty finish. Pretty authentic and true to style.

Very, very foamy. This beer has a strong herbal, grassy qualtiy to it. SLgihtly cloudy with a big, big head. Ornag-copper in color. The arom is very spicy, a classic Belgian. The flavor is dry and slgihtly hoppy with toasted malts in the finish. The finish is also slightly astringent, much to my disappointment.

On tap at Willimantic Brewing. Slightly hazy amber with a white head. Great lace! Spicy sweet nose, fruity, yeasty and a touch of dust. Light to medium body, soft but lively mouthfeel. My friend and I could not figure out what the spice we were tasting was, and I now see thyme was used. Guess that was it! Cinnamon and nutmeg notes. I liked this very much!

Draft at Capone’s. Poured a hazy orange with a nice white head. Aroma was complex with flowers, honey, and lots of earthy notes. Flavor was not as full as the aroma and had a weird mint flavor to it.

On tap at Capones. Clear apple orange with a whipped white head. Lacy patches. Yeasty nose with light orange peel. Moderate carb with sweet lemon yeastiness. Orange and grassy spice come through in the finish. Pleasant enough.
