Commercial Description:
Chef Floyd Cardoz and brewmaster Garrett Oliver have combined their inspirations to bring you Brooklyn Cuvée de Cardoz. This golden wheat beer starts with a base of malted barley and unmalted wheat and then builds upon it a delicate balance of exotic spices selected by Chef Cardoz and then toasted and ground in the kitchens at Tabla. Ginger, tamarind, mace, black pepper, coriander, fennel, fenugreek, cinnamon, cloves, nutmeg, and chilies are added in the kettle, and then the beer is infused with toasted coconut after the fermentation. Combined with our yeast and light hopping, these spices give the beer a gentle, complex perfume, a full fruity palate, and long, drying finish with a very faint prickle of heat.

Draft. Pours a hazy yellow with a silky, white head. Yeasty with some coriander, spice, and earth in the nose. Medium carbonation with a light mouthfeel. Cardamon? Grass, a little herbaceous, yeast, and a host of spices make up the palate. A little overwhelming with the spice to be honest. Definite wheat notes. This one needs better balance. Too much spice and too much sweetness. Medium finish. I don’t think I would session this beer.

Tap. Light aromas of grain for malt, perfume and a little citrus for the hops, soap for the yeast, and background notes of white wine and spice like clove. Head is small, creamy, white, with excellent lacing and is mostly diminishing. Color is clear pale amber. Flavor starts moderately sweet and finishes lightly sweet and acidic. Palate is medium, a little slick and has a soft carbonation. A sweet and perfumey Belgian Strong, but very enjoyable.

On draft at Bistro Roca. Very interesting beer. Great nose of wheat and spice, can really smell the more savory spices. There is so much going on in the flavor it is hard to describe. The savory of the spices, the sweetness of the coconut really seemed to balance in the mouth. Next I want to try this with food.

On tap at Rattle n Hum. Now this is an interesting and unusual brew. I did not know that it was collaboration between Garrett Oliver and a leading Asian chef. I’m always up for trying something like that. This had a fruity aroma and a very spicy flavor. I tasted cola, a barley wine like sweetness, coriander, lots of clove, chewing gum, and licorice. Good, and not like anything else I can think of.

On tap at the brewery. Grainy aroma with a some spices. Cloudy golden color with a medium white head. Spicy beginning that fades in the finish.

On tap at The Thirsty Monk, Asheville. Ginger, cardammon nose with light coconut and mint or Beeman’s gum. Light hops. Overall interesting aroma. Light golden clear with slight haze and thin white head. Medium body with medium-high carbonation. Starts sweet with pilsner malt, wheat, ginger, and Beeman’s gum. Spicy but smooth with light coconut flavor. Smooth finish with light bitter character and sweet spicy after.

Growler. Aroma at first filled with anise, then moves onto an array of spices, always sort of candy-like, not dinner cuisine-like. Flavor again an array of spices, always sweet, like anise candy, more flowery and nectar/honey-like than purely "spicy," always with some melony fruit notes. Though the odd take on the spiciness is fine in the flavor as such, an excess of sugar is quite wearing both on the tongue and in the gut and makes an otherwise interesting beer difficult to enjoy. Also hard to say whether the beer is truly interesting, or just very odd and muddy.

Growler from Bellport Beer&Soda. Pours a clear gold with a ring of white head. Aroma of Belgian yeast, melon, and lots of spices (clove, pepper, cinnamon, nutmeg, and others). Flavor of bready malt and pale wheat malts initially with lots of spices (definite chilies in the finish) and a light, crisp sweetness. Very interesting and fun to try to pick out all the spices in this beer. Superbly drinkable too. This is definitely underrated--what a great Belgian ale! 8/4/8/4/15 (3.9/5)
