Commercial Description:
Chef Floyd Cardoz and brewmaster Garrett Oliver have combined their inspirations to bring you Brooklyn Cuvée de Cardoz. This golden wheat beer starts with a base of malted barley and unmalted wheat and then builds upon it a delicate balance of exotic spices selected by Chef Cardoz and then toasted and ground in the kitchens at Tabla. Ginger, tamarind, mace, black pepper, coriander, fennel, fenugreek, cinnamon, cloves, nutmeg, and chilies are added in the kettle, and then the beer is infused with toasted coconut after the fermentation. Combined with our yeast and light hopping, these spices give the beer a gentle, complex perfume, a full fruity palate, and long, drying finish with a very faint prickle of heat.

Draught at Capone’s: Aroma of yeast, malts, and spices. Poured yellow/gold in color with a small white head that lasted around the edges. Sparkling. Clear. Flavor is light to medium sweet. Tastes of yeast, hops, too many spices, wheat, mint, and malts. Medium body. Slightly dry texture. Average carbonation. Yeasty, very spiced finish. Way too much spice in this. The spices just muddle any real spice flavor. 8.5%ABV is well hidden.

Holy crap the spice is all over the map! Crazy. Nose is fun and fairly pleasant, full of nutmeg, cinnamon, apple pie, pepper, thought I smelled thyme but maybe it was just the weird combo of all those other spices. Flavor is less pleasant, with the spices really harsh on the palate. Light malt is dominated by the spicy pepperiness. Maybe some phenols in the finish. Lingering pepperiness. Semi-dry.

Tap at Capones. Pours a hazy golden with a nice creamy white head that left great lacing. Aroma of an interesting mix of herbal spices, toasted malt, bready and some noble hops. Flavor of that same mix of herbal spices and ginger, toasted malt and some noble hops that are covered up by the spicing. Not a fan of the overly herbal spiciness. But still a well crafted beer.

Clear medium yellow color with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate to heavy malty, toasted, fruity, moderate hoppy, moderate yeasty, spicy, ginger. Flavor is moderate to heavy sweet and moderate bitter with a average to long duration. Body is medium, texture is oily, carbonation is soft. [20090516]

draft poured a hazy straw color with a thin white head. aroma has plenty of spices, clove, pepper, and a bit of green flowers. not the strongest mouth feel but nice carbonation. flavor pulls lots of spices some i would only hit with the description. clove, coriander, pepper, and ginger. an odd throw it all in combination that has so many directions.

Tap @ Amsterdam Ale House, NYC. Pours a hazy gold with a fluffy white head. Aroma is sweet, with a bit of a yeast characteristic detectable and a strong clove/spice presence. Taste is largely the same, with the palate much stronger than some of the Belgian ales from Brooklyn. It was, overall, very solid.

tasted like you grabed a handful of jelly beans, shoved them in your mouth and the the last one you tasted was the black one. Everything was decent about this beer except its taste. It felt like it was trying to jam everything inside of you at once. Beers by chefs have been largely boring to me, and this one certainly isn’t worth the pour.

Draught@Københavnske Øldage 2009. A thin dense whith head upon a very pale, yellow colored body. Spiced, citrus-fruity hop aroma, very fresh indeed. Fairly sweer-flavored, perfumed and wheaty with oranges and lemons and some nice spicy undertones. Very crisp in the mouth. Well-bodied. Fruity hops and spices in the finish. A true summer treat, very nice.
