Commercial Description:
Chef Floyd Cardoz and brewmaster Garrett Oliver have combined their inspirations to bring you Brooklyn Cuvée de Cardoz. This golden wheat beer starts with a base of malted barley and unmalted wheat and then builds upon it a delicate balance of exotic spices selected by Chef Cardoz and then toasted and ground in the kitchens at Tabla. Ginger, tamarind, mace, black pepper, coriander, fennel, fenugreek, cinnamon, cloves, nutmeg, and chilies are added in the kettle, and then the beer is infused with toasted coconut after the fermentation. Combined with our yeast and light hopping, these spices give the beer a gentle, complex perfume, a full fruity palate, and long, drying finish with a very faint prickle of heat.

On tap at Copenhagen Beerfestival, served by the brewer. An almost clear, a bit pale golden, with a small white head. Spiced, citrusy nose, rather sugary. Citrus, wheat malt and a nice hop dose giving citrus and some resin. Medium body, dry, with a nice co2 level. Nice finish with some sugars to deal with the bitterness and spices. A well-crafted, quenching beer. (090516)

Draft at Nachbar. Hazy gold body with diminishing white head. Lots of spice mixed with fruit in the aroma. Clove, ginger, nutmeg, pepper. Banana, coconut, lemongrass. The flavor is moderately to heavily sweet and lightly bitter. It finishes dry, moderately sweet and lightly bitter. The aftertaste includes a peppery bite. Though not cloying, it is too sweet. Medium body with a syrupy texture that turns slightly sticky. Lively carbonation. The beer has an interesting and complex nose, but the taste was a disappointing because there’s too much going on all at once. Still, I enjoyed it.

draft @ redlight redlight. Big tamarind nose, some fennel and coconut coming through as well. Pours blonde with a thick white head. There’s a lot going on but i feel like for the amount of spices in it its surprisingly mild. Fennel and corriander out front, with some clove and nutmeg coming through as well, finishes with tamarind and coconut. A very nice beer that is going well with my thai green curry, thought it might be over kill but it works pretty well.

On tap at TDR Springfiled. Poured a medium golden color with a smaller sized white head. Aromas of lots of crazy spices, a little fruity and some yeastiness. Tastes of the same weird and crazy spiciness and a little fruity. This one was ’different’ for sure.

Draft at Datz Deli. Pours hazy yellow/gold with thick white head. Smells of spice and fruit. Flavors of ginger, bubble gum and spices. Yeasty bread dry finish with a little kick at the end. Very interesting.
