Commercial Description:
Up from the primordial depths of the mind comes an experiment in chaos and unpredictability...KEGS GONE WILD. Seemingly normal beers undergo a funk-tastic metamorphosis through the introduction of resident wild yeast. After six months or so these critters like Brettanomyces, Lactobacillus and pediococcis break down the residual sugars remaining in the beer transforming them into "quelque chose" (pronounced kel ka show) or "something else".

Draft, at Capone’s (Norristown, PA). Poured cloudy yellow/golden, capped with a small white head. Aroma of yeast, spice, wild yeast, white pepper, and mild citrus. Lots of wheat flavor, with some wild yeast in the background. Flavors of grass, spice, earth, grapefruit, white pepper, and very light hops add some depth to the palate. Finishes dry. I enjoyed the base beer at BCTC; the addition of the wild yeast makes it much more exciting.

(USA) Courtesy of Matt from Capone’s !!! Pours a hazy yellow color with a med white foamy head. The aroma is of lemons, spices, and brett. Taste of fruit, pepper, malt, and a hint of funk. This taste is much better then the last brew i had with brettanomyces. :)

On tap at Capone’s. Hazy golden body with a lasting fluffy white head. Smells of fresh lemon juice, salt, wheat, and just of kiss of funk. Taste is very similar, fruity, fresh, pepper, slightly salty. Vibrant lively mouthfeel with a nice dry finish. This is how a saison should be done. Big thanks to Matt Capone for the sample.

On tap at Capone’s. Poured deeper and cloudy golden color with a small sized white head. Aromas of fruitiness, lemons, lighter brett, spices, and earthy. Tastes of citrus (rinds), bready, light brett, and a lighter fruitiness. ’Refreshing’.

[Draft @ Capones] Poured a hazy golden color with a medium sized white head that left nice lacing on the glass. Aroma of earth, some horsey brett, honey, dough, citrus, and light floral hops. Taste of more honey, citrus, toasted dough, and light bretty funk in the finish.

On tap at Capones. Pours a hazy golden with a medium creamy off white head that laced. Aroma of brett, lightly horsey, bready, lots of nice citrus notes, a little peppery, light sweet maltiness. Flavor of candied fruits, tropical fruits, orange, bready, light peppery notes, brett and dry finish.

In short: A splendid wild, almost funky Saison. Give it a more lively carbonation and we have a masterpiece.
How: Tap at Bullfrog
The look: Cloudy blonde body with an initially big but short-lived white head
In long: Authentic Belgian Saison nose, slightly reminiscent of my beloved Saison Dupont. Taste is wild, almost bretty. Light honeyed cereals dancing in a barnyard with a light dry wood flavour (cedar or something like that). The Carbonation could have used some help though. Far from a lively Belgian carbonation so appropriate for the style this one had a small amount of very soft bubbles making the mouthfeel a bit lifeless despite the beer being almost funky. The more I drank it the more I got that dry tart after-taste reminiscent of a lambic. Man that thing was good, very good. And to think I was ordering some kind of pervert beer-geek DVD...

Murky golden yellow color with a white sticky head. Very pleasant nose of spicy fruit and light funky, peppery lactobacillus, with a smaller note of brettanomyces. Flavor is tart, prickly, spritzy much like a soda, fruity, peppery, mildly sweet and juicy as well, especially in the finish. A very much improved beer over the regular Busted Lawnmower Saison.
