Aroma of yeast, spice, wild yeast, white pepper, and mild citrus. Lots of wheat flavor, with some wild yeast in the background. Flavors of grass, spice, earth, grapefruit, white pepper, and very light hops add some depth to the palate. Finishes dry. Pours a hazy yellow color with a med white foamy head. The aroma is of lemons, spices, and brett. Taste of fruit, pepper, malt, and a hint of funk. Hazy golden body with a lasting fluffy white head. Smells of fresh lemon juice, salt, wheat, and just of kiss of funk. Taste is very similar, fruity, fresh, pepper, slightly salty. Vibrant lively mouthfeel with a nice dry finish. This is how a saison should be done. Aroma of earth, some horsey brett, honey, dough, citrus, and light floral hops. Taste of more honey, citrus, toasted dough, and light bretty funk in the finish.
