Commercial Description:
This barrel aged version of our Saison Noire, infused with Belgian Callebaut chocolate and vanilla beans, breathes an exquisite aroma of chocolate. The palette burts with rich chocolate and oaky vanilla but still finishes dry and elegant.

Rich, rusty amber pour. Initial aromas are lawn clippings and bitter chocolate. Weird. Salted caramel and green bell pepper after that, weirder. And then the bell pepper starts to dominate it completely, hard to sparse out anything else. At all.

Flavor is highly bitter and chocolate heavy, and alternately very tart; there is something very foul and compost like in there that feels like a byproduct of these odd combinations of ingredients, but it isnt overpowering really. The middle is mostly bitter, vegetal greenness, peppery and tight tasting; then it gets funky and gravelly, with some bretty pineapple flavors and a lot of teeth-clinging acid. Kind of cool how it shifts so much, but its definitely more amusing than it is enjoyable.

Medium palate. Soft and oily sometimes, but brisk. Finishes very tart and dry. It would be much better if either the vegetal qualities or the heaviness of the chocolate just were not there. Such gibberish is quite memorable, though. Thanks Levi!

Bottle at Papsø’s - Thanks. Cloudy red/brown - white head. Roasted, high malty, wood, oakey, honey, bretty, light sourness, acid, peppery, vanilla, sharpness, chocolate. OK.

Bottle. Hazy brown witha medium off white head. The aroma contains notes of pepper, light acid, lacto and some malt. The flavour is acidic, peppery and vegy with notes of medicine. Different sour.

Unclear medium amber color with a average to large, frothy to creamy, good lacing, fully lasting, off-white head. Aroma is moderate to heavy malty, dry oak wood, wood, notes of cocoa beans and earth. Flavor is moderate to heavy sweet and acidic, moderate bitter with a long duration, dry dry and a chilli after burn in the finish. Body is medium, texture is oily, carbonation is soft. [20091123]

Bottle 75 cl. Courtesy of Sean9689. Lightly hazy deep amber with a creamy off-white head leaving laces. Tart chili-like nose. Medium body, again these lightly tart chili accents while the cocoa only leaves a discreet imprint. Dry and lightly tart and spicy finish. Interesting and curious rather than great. 231109

Bottle at Papsø. Hazy orange brown coloured with a medium sized off white head. Sweet aroma of caramel, fruits and berries with notes of cocoa beans and earth. Light acidic flavour of caramel, berries and earth. Tart and berryish finish.

Hazy mahogany with a medium beige head. Aroma had cocoa and vanilla notes. Flavour like wise. Finished sweet.the chocolate was a stranger here. Finished sour.

cloudy yellow, small head. strange spicy aroma, hay in the aroma. flavor is slightly sour, fruity bitter, sourness does great to this beer.

Bottled. amber coloured. Unclear. Dense light brown head. aroma of light roast, caramel, spice and very light sourness. Sourness, barnyard, spice and light caramel. Medium bodied. Dry sour and grapy end.
