The color is a nice solid copper, and like a good IPA the flavor is all about Hops; there’s the usual West Coast Cascade aroma and flavor but not all the hops are up front; after swallowing there’s a nice crisp residual bitterness on the back of the tongue. The malt is apparent but not too much so, providing a nice sweet background for the hops to sound off against. The 22-ounce bottle is perfect for the duration of the Cartoon Network ’Adult Swim’ segment... This is, incidentally, the first microbrew I could find here in Tallahassee that was in a bottle size formerly prohibited (before Oct. 1) in Florida. The fact that it’s organic makes it even more appealing. When you drink Butte Creek IPA, you get a general sense that this beer is healthy and good. It isn’t even pastuerized which gives it true flavor. The high alcohol content makes for a very mellow experience. Two 22 ounce bottles is all you need to feel at peace with the world. The nose has a lot of malt with some green grass, pine, and earth tones. The flavor is balanced between the sweetness of the malt and the pine flavor and bitterness of the hops with a lingering bitterness that sticks to your tongue. It is well-made beer.
