Commercial Description:
Once again a beer appears on the CBC menu which firmly expresses your iconoclastic brewers’ commitment to fly in the face of tradition, and boldly mess up the mainstream. Cerise Cassée is a complex beer in both process and palate. It begins with a unique, 3-day long sour mash of 100% of the malted barley. This very tart wort is fermented along with 300 pounds of sour cherries by several strains of CBC beer yeast, then sent downstairs to the secret dungeon – er, barrel cellar, where it ages for one year in French oak wine barrels (Pinot Noir and Chardonnay). Here it undergoes yet another mysterious process as a final long, slow fermentation takes place with microflora such as Brettanomyces, Lactobacillus, and Pediococcus. Don’t let those things scare you, though, because these barrels and wild beasties of beer contribute a smoothness and significant complexity which could otherwise not be attained by “traditional” modern brewing methods. The resulting tart, amber-red ale, effervescent in its flute-shaped glass, combines aromas and flavors of sour cherries, malt, vanilla and oak tannin, and a finish that defies description in its funky-yet-balanced uniqueness. Please enjoy this beer while watching the dividing walls between tradition and innovation, between the common and the most challenging, even between beer and wine, crumble to dust as did the walls of Jericho under the breath of Joshua’s horn. Flaske. Uklar rødbrun farve med et lille råhvidt skum. Dufter af træ, nødder brun sukker, bær. Smager syrligt , bær og lidt jordslået. Knas tør og et godt bid i eftersmagen.

Bottled. Almost clear and reddish brown in colour with almost no head. Quite well balanced with notes of berries, citrus,glue, light stable feel and apples.

G.A.B.F. 2008: Pours a murky brown/deep copper with a tan head. Some nice funk in the aroma- lactic/moldy cheese, oak, tart raspberry skin & sour cherry. Nice acidity on the palate. Nice and sour flavor! Acetic with underlying malt subtleties of dark fruit. Lots of lemony acidity, aged cheese rind, passion fruit, cherry, toasted oak chips and subtle vanilla. Acidic finish with residual toasted oak. Has a great funkiness as well as sourness, great stuff!

GABF 2008. A sour nose with a great cherry aspect and faint oak. A strong and sweet cherry flavor balanced by a piercing brown sugar tartness I’d expect in a flemish style sour.

GABF 2007. This was a tricky beast. Even over the course of the fest, in the same keg, the flavor changed quite a bit from day to day. I had it early on, and it was awesome. I had it later on, and it wasn’t as awesome (but still pretty good). This rating is for the first tasting. Smell: vanilla bean white oak barrel, cherry sour, and yeast. Almost Rodenbach-ish in its cherry awesomeness. Woody. Sourness is perfect, Granny Smith apple with yeast hitting in the back of the throat; the fruit is so round and fully developed, surrounded by toffee caramel sweetness. Dry-ish in the finish. Brown sugar notes in the middle, too. Oakey overtones add a nicely proportioned accent. Really, at its best, this a fabulous beer. If only it could be fabulous all the time.

Tap at BCTC. Nice stuff here. Aroma is a bit dull, some lightish cherry and brown ale notes. Rich, sour flavor with some sweet cherry and a sugary sour finish. Reminds me of sour patch kids. Not too complex, but awesome sourness. A solid brew.

GABF 2007. A hazy amber-brown beer with a thin beige head. The aroma is sweet malty with notes of wood, brettanomyces, cherries, and over ripe fruits. The flavor has a lovely acidity, that draws out the mouthwater, on which is notes of wood, cherries, and over ripe fruits, as well as lighter notes of prunes, leading to a woody finish.

Dark red and opaque. Deep cherry aroma with bugs and wood and black currant. Bracing tartness and rich cherry. Heavy syrupy note as well. Burly sour brew, powerful with an acetic finish. Much more aggressive and less complex than it was at the ’05 GABF but still pretty fun.
